Quick Black Beans and Rice
We liked this on tortillas. I used Rotel tomatos and diced chilis instead of just tomatoes for extra kick. Quick and definitely kid approved.

Lentil Cakes (Patties)
We really liked these - very flavorful and filling! Left out the walnuts with no negative results. I mixed them up in my food processor. I served them as the 'meat' in a meal with mashed potatoes, vegetable gravy, green beans, whole wheat rolls and salad. Meatless meals are new to my family, and I was so pleased to find something easy and nutritious that everyone enjoyed. I think this simple and tasty recipe will be used often at my house. Thanks for sharing!

Tempeh Sandwiches
Thanks for a nice casual meal recipe. My kids, who had been very resistant to even trying tempeh, asked me to make these again! I made them just as described, and they turned out good. I made these on a Saturday before we left for a busy day of errands, and it satisfied the kids for hours.
