Polish Chicken and Dumplings

Instead of canned soup, carefully add in sour cream instead. Yummy, and Polske-true. I love saving a few kluski to fry with crispy bacon bits and scrambled eggs the following morning. Talk about a stick-to-the-ribs breakfast!

Braciola III

My high school sweetheart's mother made braciole for me for my birthday. Hers was rolled with a bread stuffing with mushrooms and cheeses and prosciutto. Amazingly tasty, and the sauce in which it was cooked was divine. Why didn't I marry that girl?!?!

Lumpia (Shanghai version)

Wonderful! I love the sweet carrot to balance the saltiness of the soy. But I prefer a shred to a grate to give more texture and color. And getting the lumpia into uniform shape takes a bit of practice! But SO worth the effort!

Stuffed Cabbage/Golabki

I would recommend using more than one meat -- add ground beef and/or veal. It makes a wonderful difference. Shiitake mushrooms are okay in a fix, but dried Polish mushrooms cannot be paralleled. If you can't find them at an import store, you can buy them on-line.

Basic Crepes

Perfect recipe for a savory brunch selection. I added a bit of vanilla extract and some sweetener for the dessert crepe. Made batches on site for a community bake sale and couldn't keep up with the demand!

Kelaguen Chicken

Although grilled on a barbecue is best, chicken roasted on a spit at the local supermarket isn't all that bad, either. I also use chopped green onion for essential flavor and color.

Summa Borscht

My father --and only my father out of a household of eleven people -- would eat this soup every Friday. He found it hearty and satisfying. My siblings and I found it bland because of the buttermilk. Give me the borscht with beets, please.

Old-Fashioned Potato Pancakes

My grandmother would grate the potato and onion by hand and squeeze through cheese cloth to remove much liquid (which she would reserve for making potato bread). This way, she used very little flour and had a high concentration of potato flavor. On Christmas Eve, we ate these delicious "placki" rolled up with sour cream, with apple sauce, or with baked beans.

Borscht I

I needed a new variation of my traditional barszcz recipe for Christmas Wigilia -- Polish Christmas Eve. This recipe is wonderful for the occasion: hearty but meatless. A few tweaks to please my personal palate, more beet and dill flavors, and this recipe is a keeper. Smacznego!

On Guam, every family has its own brand of finadene, and each and every one is "the best". I like mine "gof pika" very hot with lots of lemon juice to cut the heat -- not! Whoever finds the best recipe to bottle -- while preserving the essential crunchiness of darkened onions, will be a millionaire! Biba Chamoru!

Fish Sinigang (Tilapia) - Filipino Sour Broth Dish

I always thought pork sinigang was superior to [ocean] fish until I used [fresh wtaaer]tilapia. This fish has a very delicate flavor and a decidedly un-fishy aroma compared to bangus and over-the-reef fish. Sinigang is awesome comfort food, and as I get older, the more I like it on the sour side. Excellent recipe.

Cabbage Rolls III

I think uncooked rice is too risky because it may not soften completely. I semi-steam the rice in beef broth until al dente, cool, and then add to a three meat mixture. When semi-cooked, the rice still absorbs meat juices/flavors but dies not add any undesireable textures.

Polish Style Lasagna

The potential for a real "WOW" is there -- it just needs to pop with flavor. I use lots of fresh mushrooms with the onions, use real mashed potatoes with sour cream and cheddar, and a ricotta/egg layer. It's rich and not for every day, but it's new hit at Wigilia!

Filipino Pork Adobo

Does the recipe call for tomato ketchup or the Filipino banana-based ketchup? I don't particularly care for the tomato in this dish. Also, too much vinegar and soy in this recipe for my tastes. I'd prefer 1/2 c vinegar and 1/4 c soy.
