My name is Emily and I love to cook! (Obviously, right?!) I am a recent Radiologic Technologist graduate, getting married Oct 2008 and am happier than ever.
My favorite things to cook
I love mexican and italian food...I'm probably better at cooking italian but could eat mexican every day. I like to get creative with stirfry and use different veggies.
My favorite family cooking traditions
I cook 10lbs (and sometimes more) polish sausage for my large family every Easter. My family origin is Polish and Czech. I haven't attempted making pierogi yet, maybe some day (I hear it's a lot of work)
My cooking triumphs
Last Mother's Day I managed to make an egg casserole, french toast casserole and Apple pancake while my BRAND NEW gas oven would only work under the broiler setting. It was stressful but everything came out okay!
My cooking tragedies
Well I guess the Mother's Day Brunch of 2007 could be a tragedy as well.

Slow Cooker Carnitas
Totally awesome, plenty of leftovers to eat off of for a few meals, and great low-stress meal to make for entertaining. I also quickly ran out of rub so I tripled it as recommended and it was fabulous. I've made this twice and received many compliments (and you barely do anything!) People think you slaved in the kitchen all day! Chili powder is a must and I used minimal cinnamon (mostly b/c i'm afraid of the strong flavor). This will be added to my permanent recipe book! PS: if you want it spicy, add red pepper flakes!

French Toast Bake
YUM-O! The taste is perfect. I get many compliments on this recipe, but like the other say, CONSISTENCY is an issue. My toast came out a bit soggy too. I have made this twice and the second time used less egg mixture and it was much better. I didn't have blueberries on hand so I used a bag of frozen mixed berries and it was delish! Also, I add the pecans with 10 min remaining since they burn easily.
