My favorite things to cook
I like to cook good main dishes for dinner. I look for low carb. dinners. I don't cook much desserts because of having a diabetic husband, but I do like finding a low calorie, low sugar dessert sometimes. I also like to find good potluck dishes since our church has a potluck once a month.
My cooking triumphs
My Chili Recipe has taken first place at Chili cookoffs. I have gotten many compliments on some of my potluck dishes.
My cooking tragedies
I got married at 16 and the first dinner I made my husband was fried chicken. It was burned on the outside and raw on the inside. I have learned how to cook fried chicken now but don't cook it anymore. I cook baked chicken for health reasons now.

Brown Rice and Black Bean Casserole
I did ingredient search for zucchini and found this recipe. It sounded healthy and good. So I tried it. My husband liked it and I could taste it even though my taste buds are way off due to chemotherapy. The changes I made was I thinly sliced baby carrots instead of shredded. I thought I could taste them better and I did taste them a bit. I didn't have Swiss cheese so used chedder. And I only put a sprinkle of Cayenne because I can't eat spicy at this time.

Turkey Minestrone
I made this for a Bunco party of 12 and it was a hit. Lots of raves. I stayed pretty close to the recipe using fresh carrots, celery, mushrooms, spinach, Zucchini and frozen green beans for the vegetables. I had to simmer a bit longer to cook the carrots. So carrots went in first and then the others according to how long they needed to cook. I used Acini Di Pepe for the macaroni. Thank you for the great recipe!
