Potato, Broccoli and Cheese Soup
WOW! I've never made broccoli soup before and this came out better than I had ever hoped for...even my 3-year-old loved it. 1st sauteed 1/3 sweet yellow onion, then added 2 cloves of minced garlic. Then added 7-8 large cubed Idaho potatoes, 3 C fresh broccoli and cooked them together with 4 C water and 3 t chicken buillion + 1 C milk. Per others' suggestion, I used potato masher and it worked so well. Added 1/4 t white pepper, kosher salt and 1 C mild cheddar cheese. I added 1T corn starch to thicken the soup to my liking.Oh, I had to walk to the computer to write this review so I would stop eating :)

Marinated Ranch Broiled Chicken
So easy and so good! Very moist chicken with only 1.5 hours of marinating time. I broiled 5 min, turned the pieces and broiled another 2-3 min. Very yummy with pasta and alfredo sauce.

Slow Cooker Beef Stroganoff I
Wow, the best stroganoff I've had! I don't usually eat red meat but decided to buy $5.00 worth stew meat (2.2 lbs) just for this recipe. I took others' advise and used beef boullion, added fresh garlic, eliminated onion and instead of sour cream, I added 1/4 C plain yogurt and 2 oz low fat cream cheese (it's soft straight from the fridge unlike the regular cream cheese). I also used healthy choice CREAM of mushroom soup and did NOT add any salt. I added 10-12 sliced white button mushrooms 1/2 h before I was planning to serve, but they needed another 30 min to be as soft as we like them. The sauce itself is a total treat with rice. I'm in love with this recipe after the modifications.
