Black Bean and Corn Salad
Thank you SO much! Wow! What a delicious suprise! I'm never been fond of any sort of "bean salad", but I've now changed my mind! This one was very easy to prepare and every single person at our large 4th of July family gathering thought it was delicious, including me! I followed the directions exactly, BUT doubled the recipe and I did add appx. 1/4 cup of chopped Cliantro. We ate it both plain and with Corn chips. It was a HUGE hit!

Orange Cream Cake III
*** Addendum: Ooops, We DID use WHITE Cake mix instead of Orange! We made this cake yesterday (over the July 4th holiday weekend) and it was FABULOUS!! We had a large family gathering and this cake was loved by all! I wanted to make something that my young daughter could help to prepare and feel proud of. It turns out this was a great choice. The recipe was very easy. We used Sugar Free Orange Jello and Sugar Free Vanilla Pudding (You couldn't tell ANY difference in the taste), and regular Cool Whip. The cake was very light, cool and not too sweet.... Overall, it came out perfect and was extremely delicious! I'll definitely be making this again!

Sunday Gumbo
This is VERY good Gumbo! To think, my day started with the idea of preparing a simple tomato/okra/corn side dish...but when I read the ingredient list, I realized I already had everything and figured I'd just go for it. So glad I did! I followed this recipe to the letter and found that the prep time was alot shorter than I anticipated and overall it was VERY easy to prepare and quite Delicious. The only thing I'd change would be to cut the Cayenne Pepper in half or even into a third. This dish has plenty of flavor even if you didn't add any Cayenne. Serve with a good bread and simple salad. Everyone LOVED it! Even my picky 16 year old!
