Roasted Beets and Sauteed Beet Greens
Great! I've never cooked the beet greens before and they were great with the wine vinegar. I used white wine vinegar and also thought a nice goat cheese and walnuts (for crunch) would have been nice. What a clean and easy way to do beets!

Spinach Apple Salad
Simple but very tasty! I added chopped pecans and should have increased the amount of liquids because there was barely any 'dressing' but the flavor was great! I also used only spinach leaves which worked out great as well. Will use this again and again.

Indian Eggplant - Bhurtha
This was awesome and fairly simple to make! Made it as an experiment for my boyfriend and myself before I serve it to guests and we LOVED it. The heat was a perfect amount, the flavors were outstanding, and it was all very easy and cheap to make. I will be making this recipe many many many more times.
