Eggless Tofu Spinach Quiche
I really liked the taste of this and it was not too hard to make. It held its shape better as leftovers than when first made, so maybe next time I'll add a little less milk or let it set longer before eating (hard when hungry). The true test for this dish is that my tofu-hating husband had it again the next day for lunch!

Easy Vegetable Pot Pie
This was almost embarassingly easy and even my meat-eating husband liked it! I added some extra milk/soup with dried lentils to give it added protein. If pie crust on the top and bottom is just too much pie crust for you, it also serves up attractively with bread crumbs sprinkled on top.

Microwave Fettuccine Alfredo
This is very good and very easy! I made a larger batch and it still turned out well. Better than some fettuccine I've had at sit-down restaurants! (I made this again with lowfat cream cheese and 2% milk and it was still fantastic.)
