Easy OREO Truffles

I will agree that these are easy - and if you chill the rolled balls, they are a cinch to dip. They are tasty, and my family gave them 4 stars (compared with other truffle recipes we have made).

Roasted Rack of Lamb

This is a spectacular recipe. Like several other reviewers I used panko crumbs which turned out very well. I found the mustard worked effectively to 'stick' the crumb mixture to the lamb. With garlic mashed potatoes, and roasted carrots and asparagus topped with feta cheese this rivaled any restaurant meal. Thanks for sharing the recipe Jennine.

Maple-Garlic Marinated Pork Tenderloin

This is a great recipe - and my confession is that I only had time to marinade it for an hour, and it was still very tasty. I made as directed, but reduced the maple syrup by 1/3 cup after reading some of the reviews. I drained the marinade and cooked it in a small pot for 10 minutes to make sure it was safe to use as a sauce, and then baked the pork for 40 minutes at 350 (until an internal temperature of 165 degrees F). Great company fare.

Homemade Chicken Fettuccine

I did make some adjustments, more because of what I had on hand. I used penne pasta, added 3 minced garlic to the chicken and mushrooms while cooking and added halved grape tomatoes and sauteed pea pods before adding the 2% milk (which I substituted for the cream - and I used just 3/4 cup milk). Yummy!

Easy Slow Cooker French Dip

I have a new slow cooker, and this was the first recipe I tried with it. I thought the beef was tasty and tender, and the dipping sauce was just as I remembered it when I had beef dip years ago. I added garlic powder to the beef roast before cooking, and I used 1/2 bottle of beer as some other reviewers suggested. There was no way the beef was able to be sliced, but shredding was fine. I cut the buns in half, toasted each, then heated the meat on one side and melted cheddar cheese with green onion on the other - and to serve, put the meat half and cheese half together. YUM.

Orange Glazed Pork Tenderloin

After reading the other reviews, I made a few changes. I doubled the orange marmalade, and also used olive oil instead of butter. While there still wasn't a strong orange flavour, it was detectable and a very tasty pork meal. A definite make again.

Mushroom, Cheese, and Haddock Bake

This is a very good recipe for haddock - I used crimini mushrooms, omitted the dried chili peppers and substituted cheddar cheese for the blend suggested in the recipe. If you use fresh fillets, they'll be cooked after the first 15 minutes, so I broiled the cheese after the initial cooking time and that worked like a charm. The reason for the 4 stars - having access to fresh haddock all year around, I have other recipes that are just awesome. This one is great for a quick week-day meal.

Shrimp and Feta Cheese Pasta

This was just a delicious recipe - and since I had most of the ingredients on hand, it was a great shrimp recipe to try. I did use fresh oregano for the dried and penne pasta for the linguini, but other than those two modifications, I followed the recipe. It is a definite make again, and a company good fast meal.

Buttermilk Pancakes I

This is a great recipe for pancakes. I substituted 3/4 cup plain yogurt and 1/2 cup milk mixed together, for the buttermilk, which was a more than acceptable modification (and one I got from a Cook's Illustrated video). I used my hand blender to mix the batter, and then folded in 1/4 cup chopped fresh strawberries, which added a tasty flavour. Thanks for the recipe, Leema.

Mushroom Chicken Dijon

I found this a delicious recipe - made a few adjustments - I did pound the chicken breast, dried it off and just lightly dredged it with flour (so likely used 1/2 tbsp flour). I used Crimini mushrooms (which I find hold their shape and seem to give off less water in cooking), about 1 tbsp of green onion, 1/2 cup of 3.5% milk and 1 tsp of Dijon mustard. I didn't boil it, but brought the 'sauce' just below a boil. Tasty indeed.

Summer Lamb Kabobs

What a delicious recipe - I made 1/4 of the marinde and poured it over 5 loin lamb chops. I doubled the oil (which was only 2 tbsp given the proportions) as I found the mustard taste too strong - but the added oil was just the ticket. I only refrigerated the lamb for a few hours and the flavour was awesome. Will try as kebobs in the future.

Best Chocolate Chip Cookies

These cookies were delicious - I made as directed, except used a new chipit (that is a combination of white and milk chocolate) and substituted pecans for the walnuts. A definite make again - thanks for the recipe Dora. You've filled loads of cookie jars if the reviews are any indication :-).

Oatmeal Waffles

What a great recipe - we really liked the nutty flavour from the oatmeal. While we were eating the waffles, I remembered I had left the melted butter in the microwave, so I made the recipe without any of this added fat, and they were still delicious (I even used skim milk). I served the waffles with vanilla yogurt and sliced banana (although my son had them with maple syrup, which he said was very tasty). Next time, I will try them with half the butter, just to see if it makes any difference :-).

Grilled Salmon With Orange Glaze

Another salmon recipe from allrecipes to add to my repertoire. I used salmon steaks, brushed the glaze on both slides, and let them sit for 1/2 hour before cooking on the barbeque. The only adjustment I made to the glaze was to use 2 tbsp of white rice vinegar and 1 tbsp of orange juice. Good flavour.

Sweetly Stewed Rhubarb

One of the wonderful things about spring is fresh rhubarb, and I have been stewing it for a long time. I have never added cinnamon or fresh cut-up strawberries (as one of the other reviewers suggested) and I thought both added to the flavour. To save time, I cook the rhubarb (about 3 cups) in the microwave, in a high-sided dish with a lid. To the diced rhubarb, I add just enough water to cover the bottom, cover, and cook until the rhubarb is soft (usually less then 5 minutes), then I add the sugar to taste (and this time, I put in strawberries and cinnamon as well).

Four Cheese Margherita Pizza

All the excellent reviews made me want to try this recipe, and I am glad I did. It is an awesome pizza. I used home made pizza dough and omitted the fontina cheese (didn't have any). After assembling the pizza, I had some leftover tomato marinade, so drizzled it over the pizza which intensified the garlic flavour. Thanks for the recipe, Michelle.

Garlic Red Potatoes

I am always on the lookout for new potato recipes - made this for a Canada Day barbeque, and it was a popular addition to dinner. I made as indicated in the recipe, and the cooking time of the original recipe even worked. My red potatoes were relatively small, so they were cooked in the time indicated (and just to make sure, I raised the temperature to 375 degrees - which helped with the browning as well).

Honey Mustard Dressing I

This was a good salad dressing - I read the previous reviews and made several adaptations. I halved both the mustard (I used Dijon) and the soy sauce, omitted the garlic powder and used fresh dill weed (about 3/4 tsp chopped). It was tasty, and with the changes, a 'make again'.

Strawberry, Kiwi, And Spinach Salad

This is a tasty salad. I used balsamic vinegar in place of the raspberry vinegar (i didn't have any), and reduced the oil by a few tbsp. I also candied the walnuts by adding some brown sugar to a small frying pan and toasting the walnuts while the sugar melted. It was very good! Thanks for the recipe, Amy.

Cinnamon Rolls III

These are very good cinnamon buns, which I made for a brunch my husband and I hosted for my parents on Mother's Day. The recipe was easy to make, and the resulting buns were tasty. I have made the 'Clone of a Cinnabon' recipe (also on this site) a few times, and think the latter are just a tad better (and you don't need the pudding mix). That being said, both have won rave reviews from tasters!
