About this Cook
I was forced to start cooking when I got married and realized my husband didn't know how to cook either! I used to ruin everything I tried to make in the kitchen, whether it was heating up soup or making toast. But I will never forget the very first time I made something that was actually edible!!
My favorite things to cook
Are usually things that are quick and easy yet taste delicious. I love to make one skillet meals usually with chicken, rice or pasta, veggies, and different kinds of sauces/seasonings.
My favorite family cooking traditions
Making what seems like thousands of cookies at Christmas time and decorating them with the whole family, and it has been a joy to include my 3 year old son in this tradition.
My cooking triumphs
Any time I try out a new recipe and my family loves it, it is a triumph for me! My most recent triumphs have come from Jessica Seinfeld's new cook book "Deceptively Delicious"- because the recipes are not only delicious and easy but they are healthy as well!

Broccoli Cheese Soup V
Very, very good! I took the advice of others and used only about 4 ounces of velveeta, and probably about 1-1/2 cups of medium cheddar cheese. I also did not use chopped broccoli, I used florets. This recipe makes a TON of food! It does keep very well in the fridge for leftovers though! Great soup, great for getting picky kids to eat broccoli. I have made variations of this using broccoli and carrots, and I made asparagus cheese soup too. Very good base recipe. Add your own seasonings to make it how you like it.

Iced Pumpkin Cookies
These cookies are super yummy!!! They taste like pumpkin bread, but cookies! I also used pumpkin pie spice instead and added cinnamon to the frosting. Delish!

Amazing Pork Tenderloin in the Slow Cooker
Yummy!!! I used a pork roast, tenderloins are so expensive, you really shouldn't waste them in the slow cooker when a cheaper cut of meat works just as well. But the sauce was super delish!
