Southwestern Egg Rolls
Great recipe!! I just made a few changes: I skipped the spinach out of preference. I boiled the chicken and shredded it. I also spiced it up a bit by added chili powder. Making the egg rolls is more difficult than I imagined. It really helps to microwave them and keep a damp (more on the wet side) and wipe down both sides of the tortilla before rolling. I also froze the egg rolls over night which I don't recommend--they took a lot longer to cook. But don't skip freezing-it helps the rolls stay together when you cook them.
