Roquefort Pear Salad

I made this for a large family gathering and the compliments didn't end till we walked out the door to go home! I made the recipe exactly as written. I think next time I will try the balsamic vinegar to give it a little zing for the taste buds. (I like things with a little bit of kick)

Kalua Pig in a Slow Cooker

I made this for a 50th wedding anniversary luau. It was amazing! I used the red Hawaiian salt with mesquite liquid smoke. We also set out 4 different types of bbq sauce and Hawaiian rolls for sandwiches. It was a big hit! We did the 6 pounds for 16 hours. I was afraid the time might be too long but the meat was incredibly tender, moist and tasty. I also drained the meat, pulled the fat from the top and returned the juices to the crock pot. We served it along with marinated chicken kabobs. There was plenty for 35 people and just enough left overs for dinner the next day, which made my family very happy!

Carrots Au Gratin

It was good to try something new with carrots! The family liked them but they didn't knock my husband's socks off. I will make them again and maybe add something to spice them up a bit.

Avocado and Tomato Salad

We like this recipe. We used our favorite bottled dressing instead of putting our own together. We added the avocados last because of the other reviews, it was a smart thing to do. They get a little creamy when stirring and discolor the rest of the salad.

Garlic Mashed Red Potatoes

I had a four small potatoes left over from another recipe and threw this together just eyeballing the ingredients for one. My daughter is a vegetarian and LOVED them! It's simple and very tasty.

Six Can Chicken Tortilla Soup

This is a perfect soup for a large crowd! I had 25 people to feed and tripled the recipe. They ate it all and many asked for the recipe. As suggested I used rotisserie chicken, it was cheaper than chunk canned chicken for the amount I needed, and then spiced things up with chili, cumin and a bit of cilantro. I served with white tortilla chips, sour cream and grated cheddar cheese. It's a winner recipe!

Cheddar and Olive Balls

Love them, love them, love them! I always add garlic salt and hot sauce to taste. It gives them a great little kick! They are a great make ahead appetizer too. Just roll the balls and place them in an air tight container, you can keep them in the fridge or freeze them. I make a couple batches and then bake them as I need them during a get-together. The entire family loves them!
