Kalua Pig in a Slow Cooker
I made this for a 50th wedding anniversary luau. It was amazing! I used the red Hawaiian salt with mesquite liquid smoke. We also set out 4 different types of bbq sauce and Hawaiian rolls for sandwiches. It was a big hit! We did the 6 pounds for 16 hours. I was afraid the time might be too long but the meat was incredibly tender, moist and tasty. I also drained the meat, pulled the fat from the top and returned the juices to the crock pot. We served it along with marinated chicken kabobs. There was plenty for 35 people and just enough left overs for dinner the next day, which made my family very happy!
