Spinach Stuffed Chicken Breasts
I used some ideas from other comments, and this recipe is just fabulous. I used reduced fat sour cream instead of mayo, and fresh baby spinach (steamed), I also tucked the bacon in the pocket with the filling. Came out moist and tender, and my five year old cleaned his plate (that alone makes this 5 stars).
