Apple Enchiladas

Delicious, easy and cheap to make. I used thinly sliced granny apples instead of the pie filling and did not need to precook them. Don't forget the vanilla bean ice cream!

Chocolate Chip Pancakes

I sifted the dry ingredients before adding the wet. Also, I added vanilla to the batter. I used an electric mixer before adding the chips and that made for a much easier job. These are flawless pancakes, very fluffy and melts in your mouth. The best recipe ever! I did not care for the honey butter syrup. I just added butter to store bought and heated that up.

Stuffed Mushrooms I

I brushed the mushrooms with garlic spread and added 1 cup of shredded cheese (Italian mix) to the stuffing. I topped with italian bread crumbs and right before serving, more italian shredded cheese. These are the best stuffed mushroom we've ever had!

Manhattan Meatballs

I mixed 1 lb of lean beef with 1 lb of sweet italian sausage (and the other ingredient in the recipe). I browned the meatballs in a skillet and then cooked them on high for 2 hours in the crockpot with the sauces. I was unable to find pineapple preserves so I used 8 oz of duck sauce and 8 oz of sweet and sour and mixed that with a bottle of KC Sweet homestyle bbq sauce. These are excellent on rice and the next day I bought sub rolls and had meatball subs with cheese and ranch dressing. VERY GOOD!

Macadamia-Crusted Sea Bass with Mango Cream Sauce

I used halibut wich came out nicely but watch out for bones. I subbed smoked almonds that I crushed in the food processer instead of macadamia nuts. The mango sauce worked very well! I omitted the red pepper and instead of seasoned bread crumbs, I used plain because I thought it would be a better backdrop to the mango sauce and I think it was. I've used this mango sauce successfully with talapia too. Overall, a very good recipe!

Mango Shortbread Bars

The crust used in this recipe is so perfect and it can be used in other recipes that call for a crust as well. I've tried many recipes that lacked a good crust but now that I have this recipe, I plan on using it instead. My only change: I added fresh raspberries in with the mango. Eat warm with ice cream to fully appreciate it.

Lemon Square Bars

Crust didn't taste very good at all. I recommend using a different crust. Next time I'll use the crust from Mango Shortbread Bars: 1 1/2 cups butter, 1/2 cup white sugar, 3 cups sifted all-purpose flour.

Three Cheese Manicotti II

Good basic recipe however, I will use large shells next time instead as they are much easier to stuff and don't split as easily.

Bow Ties with Sausage, Tomatoes and Cream

I left out the red pepper, added sauted mushrooms and topped with shredded mozzarella. ABSOLUTELY LOVED IT!
