Curry Pumpkin Soup

This is a fantastic recipe !!! I usually make it exactly as written , but sometimes will add finely diced peeled apples. I like to take it to work with me for my supper. I add a salad and savory crackers and an small cup of diced canned pears with a ginger snap added to malke ginger pears. I usually omit the pumpkin seeds (personal choice) Thanks Mary.

Marinated Grilled Chicken II

Made this last night when my grand daughter was over. So simple, and so good. Had only low calorie Italian derssing, but I really dont see any difference. Made exactly as written, except divided in half as there was only the two of us. Next time (I will be making this again soon) will add a little more cayenne pepper, as the samll amount was not noticable. I also cooked it on my panini grill as I did not want to fire up the grill for 2 chicken breasts. Fantastic! Sorry I did not make the full recipe so as to have left overs to take to work for lunch.

Mother's Whipped Lime Dessert

The recipe should state to ues vanilla WAFFLE (with frosting between the layers)wafer cooies and not just vanilla wafer cookies. They really are quite good and something a little different.

Chicken Livers with Red Wine and Bacon

WOW! What a yummy recipe. Cut recipe in 1/4s as I made it for only one person. I did not have dry red wine, but did have some Mogen David Concord Grape wine, cooked them to reduce the wine and make a glaze.Also omited the olives as I don't care for them. They turned out fantastic. Served them with a baked potato, peas and 3 bean salad.Thanks Va , for a wonderful recipe. They will be on my regular rotation.

Marmalade-glazed Carrots

A new favorite way to fix carrots. Have been looking for a recipe similar to this for years. It brings back memories of how my mother used to fix carrots. The ginger and nutmeg addition are perfect, and is what makes the recipe.

Zesty Grilled Veggies

What could be easier? These are delicious, a real favorite at backyard BBQs. I did add mushrooms, yellow summer squash and tomatoes, and substituted green bell pepper for some of the red and yellow bell pepper. Very colorful. They were even good the next day, reheated.

Wonderful flavors. Quick-- less than 1 hr. Very colorful. Do not cook long when returninig meat to pot- only 2-3 min and meat will be med rare. Made for Matt's family. Everyone liked even Opal.

Oven Roasted Potatoes

Use Yukon potatoes cut in 8ths or new/reds cut in 1/4s. Put in lg plastic bag with oil. Add salt and BLACK pepper. Forget the herbs-they conflict. Add 2T dried rosemary, the garlic--more if you like-- thats it salt, pepper, garlic, rosemary. Shake the bag and let it sit on the counter for no more than 10 min shaking occasionally . If desired subsitute basil for the rosemary. Then bake., You get the idea. Keep it simple

Escarole and White Bean Soup

Excellant!!! Suprisingly filling, but yet low cal. Needed no salt. Added tomatoes with the beans, so they wold not break down in cooking. Also needed 1 1/2 to 2 times the broth. Could not find escarole, so used baby spinach instead. Very good subsitution. Made 1/2 recipe and had enough for dinner the 1st night, plus 2 lunches. Made it on 02/15/08
