Breakfast Pies
Good, but like many others, I had to use a lot more eggs! I used the Pillsbury buttermilk biscuits in a can and had to use 8 medium eggs just to fill my 12-cake cupcake pan (and it's not a huge muffin, they are regular size). I also omitted peppers & onions and added pepper & garlic powder to scrambled egg mixture.

Mexican Bean Salad
This dressing is the BOMB!! I use it on so many other summer salads including Shrimp-Avocado salad on AR. Fresh ingredients & herbs or a must for this lively salad.

Avocado-Shrimp Salad
This is a great base for the salad but I use the dressing from "Mexican Bean Salad" on this site. It goes PERFECTLY together!! I also add cucumbers, black olives, and fresh sweet corn. I also use raw shrimp and cook myself, since most store bought pre-cooked shrimp is way overcooked.
