Lemon Square Bars
DO NOT MELT BUTTER!!! I followed the recipe exactly with 1 cup of melted butter and the crust turned out flat, hard to cut, and greasy. All other lemon bar recipes say to cut in the butter to the flour/sugar mixture - this creates a flakier crust. Lemon filling was wonderful but crust was not!! Once again, DO NOT USE MELTED BUTTER!!!

Breakfast Pies
Good, but like many others, I had to use a lot more eggs! I used the Pillsbury buttermilk biscuits in a can and had to use 8 medium eggs just to fill my 12-cake cupcake pan (and it's not a huge muffin, they are regular size). I also omitted peppers & onions and added pepper & garlic powder to scrambled egg mixture.

Mexican Bean Salad
This dressing is the BOMB!! I use it on so many other summer salads including Shrimp-Avocado salad on AR. Fresh ingredients & herbs or a must for this lively salad.
