Carrot Pineapple Cake I
This was an extremely easy cake to make. I first made it for my mother's birthday, as a layer cake. My husband asked me to make one for his co-worker's birthday and I baked it in a bundt pan. I adjusted the baking time accordingly. It is a very forgiving recipe and takes well to ingredient changes (i.e. more crushed pineapple, less oil.) This is definitely a keeper.

Creamy Rice Pudding
Excellent Rice Pudding. I substituted 1/4 cup brown sugar for the 1/3 cup white sugar. It came out beautifully. Just as good cold as warm.

Sauteed Apples
I made this for a dessert to serve my mother and one of her friends. We also added pecans and served it with vanilla ice cream. I definitely plan to make it frequently. It's not as heavy as making something with a starchy crust. (I cut the apples (sprinkled with lemon juice) and measured the dry ingredients before I went to my mother's apartment.) Dessert was ready by the time we finished cleaning up the dinner dishes.
