Roasted Sweet Potatoes & Onions
This is a great recipe as is but I added a couple items and it is wonderful. I lined a 9x13 pan with parchment paper, pour everything in the pan, top with filets of fish. (I like walleye) Season with salt and pepper and top with fresh thyme. Cover with another piece of parchment paper and tuck under bottom piece. The parchment paper steams the contents inside. Cooking time approx. 15 min at 425 and 15 at 400. Depends on the thickness of your filets. Enjoy!

Tomato Salsa
Very good flavor, I made a few changes. I have a hand grinder called a quick chef by tupperware and this is what I used to chop everything. I leave the skins on the tomatoes and it goes very fast. I put all the ingredients together and simmer. I deleted the green chiles, added 1/2 cup vinegar and 4 TBSP lime juice.

Delilah's Frosted Cut-Out Sugar Cookies
I will add this recipe to my recipe box. It was great! Good flavor and easy to work with. Next time I will not roll out as thin. I baked them on a baking stone and they turned out just perfect. Thanks
