Zucchini Tomato Pie

This was really tasty! Only 4 stars because I had to tweak it for the consistency I liked. I sauteed the onions in olive oil (butter would also work), then added the zucchini so it wouldn't be crunchy, and added some fresh garlic to the sautee. I squeezed out the excess moisture too once it cooled a bit, so it wouldn't be watery as some people noticed. I didn't have parmesean so I added flavors with herbs instead - fresh basil and I wasn't too shy with the salt, plus I added an egg and used a tbs of lemon juice with the milk to make it "sour". Baked it in mini muffin tins to make personal sized pies. It disappeared within minutes of serving it at a party!

Key West Chicken

I wanted to make something that would be good served cold, so I stole the marinade idea, tweaked it, and used it to marinate and bake tilapia. (It'd be great with any fish I'm sure). This was amazing! I doubled the recipe, used coconut oil instead of the veg oil, and the juice of about 3 limes, and a bit less soy sauce than called for, and fresh garlic with a bit of black pepper. The coconut/lime combo was amazing, and everyone loved it. Don't skip the honey! Serve it in more of the sauce and it's incredible.

Hasty Chocolate Pudding

This is really tasty, super chocolately and so fast and easy. It does taste a bit corn starchy, though, and maybe a little bit of butter might help it. It is a pretty diet-friendly choco-fix too, especially if you substitute Splenda for the sugar, which makes no difference in the taste in my opinion! You can do a LOT of different with this recipe.

Lemon Blueberry Bread

This was pretty good! I changed it up a little, b/c I didn't have all of the ingredients and I felt like being creative. I subbed 1/2 cup of the ap flour for corn meal to make it interesting, and added a dash of nutmeg. Also, I didn't make the glaze, which would have been good. No walnuts or blueberries, just lemon muffins. :)

Pumpkin Chocolate Chip Muffins

Made these with friends and they were tasty. Increased the spices except for the nutmeg and added ginger, rice milk instead of the water, vanilla, brown sugar, and for 1/2 of the flour we used spelt. Nice texture, puffy and not overly dense.

Health Nut Blueberry Muffins

This recipe is delicious - even people who are not "health nuts" will enjoy this because it just tastes good - nice flavor and texture and it's adaptable to whatever you have on hand. I subbed wheat germ for ground flax seeds, used half white/half spelt flour, and I soaked my oats in the liquid ingredients while I did everything else to soften them and sifted the flour, and they were airy and soft but moist. Yum!

Jumbo Breakfast Cookies

I have to say this seems like a great cookie recipe but I don't know why it is categorized as a "breakfast cookie." people, you should not think that this is healthier than a DONUT!! It's a COOKIE! :) Just a friendly reminder from the nutrition police...

Orange Quick Bread

Pretty good - I used fresh squeezed orange juice and fresh orange zest, added a tsp of vanilla extract and plumped the raisins in the microwave with a little extra vanilla. I also added a little ground flax meal and some whole wheat pastry flour, all purpose and baking powder instead of the baking mix. Awesome!

Oatmeal Whole Wheat Quick Bread

I am impressed! This recipe is such a keeper - so easy and versatile, I added ground flax meal, extra whole oats and swapped the honey for maple syrup (but used 3 or so tbs) and added cinnamon and cloves. also used spelt flour instead of whole wheat so the extra liquid (maple syrup) made up for its different properties i think and made it slightly sweet. SOOO good! DON'T replace the oil with applesauce - one tablespoon will hardly make a difference in nutrition but it is really important for the consistency.

Buttermilk Cinnamon Bread

wowowowowowow! Run to your kitchen, people! This is sooo good and so easy to make! Oh my gosh! It smells amazing baking and it is delicious. I do not think it needs this much sugar, I used a little less. I used a splash of vanilla too. I can't express enough how tasty and wow this is. I am definitely making this again.

Very Simple Spelt Bread

This was suprisingly good, especially with so few ingredients! I didn't have sesame seeds, which would have been nice but to give it a nutty flavor I had almond milk (strange but true) which I used instead of the milk gave it a good nutrition profile and the nutty flavor it's supposed to have. I didn't have molasses so I used honey, everything still came out great and it looks pretty. Just don't overbake it. ALSO people, freeze this for later use because spelt goes SOUR after a couple days and it will taste terrible!

Lower Fat Banana Bread II

This was sooo good! I love vanilla but 1 tablespoon is WAY too much. I reduced it to a little over a teaspoon, that is for sure a mistake in the recipe. I didn't do walnuts or choc chips but I added a big handful of fresh blueberries, and it was DELICIOUS, it disappeared quickly. Also, I used half whole wheat pastry flour. ****I make this a lot, and I've tried different things like adding a couple tablespoons of flax meal and a tablespoon of honey, and taking out some of the liquid since flax is considered a fat substitute. I really recommend it - it comes out so nicely and adds to the nutrition profile a lot.****

Applesauce Bread

Wow!!! This was sooo good! It came out moist and flavorful - I'll definitely make it again; I made a few changes - I didn't bake it for as long, I used a little less nutmeg, a full teaspoon of cinnamon, added vanilla extract, and also reduced the margarine to 3 tbs but used slightly more applesauce. Well I guess I revamped it a little but that was really just according to taste... Thank you so much.

Banana Chocolate Chip Cake

Yum! This was delicious, but I think there was a little too much butter in this recipe, it could have been reduced by a couple tablespoons (and maybe replaced with applesauce). Also, using baking soda instead might have been a good idea. I added vanilla and used half light brown sugar. It came out really moist.
