Steamed Radishes

I used my steamer and added lemon juice, butter, and dill weed. I was stunned at how delicious these are! It never occurred to me to cook radishes before, but I am so glad to find a way to enjoy them in some other way than plain or in a salad.

Onion Cheese Biscuits

This is a really good recipe. I made my own "baking mix" because I like to control what ingredients goes into what I make, and I think that stuff is just a waste of money. (For the mix: 3/4 cup unbleached white flour, 3/4 cup of stone ground wheat flour, 1 1/2 tbsp Smart Balance Light Buttery Spread, 1/2 tsp salt) I also added 1 clove of fresh minced garlic, 1 tbsp of Flax seeds (great tasting source of fiber), and 1 tsp of gluten (makes it nice and fluffy) to the biscuit dough. I didn't have Poppy seeds, so I sprinkled the tops with Sesame seeds.

Saucy Lima Beans

This is pretty good, though I'm not sure how fair my rating and review is since I used ultra skim milk instead of half-and-half. I also added thyme and oregano and cooked it in a pressure cooker. Still, the herbs added a really nice twist to the beans so I think it is definitely something everyone should try. I don't think it really needs an overly rich sauce to be enjoyable.

Avocado Quick Bread

This tasted like a loaf of spices and sugar. I doubt it'd have made a difference if I'd completely left the avocado out of it. I certainly couldn't taste them at all.

Grandma's Apple Bread

This is excellent tasting and very healthy, but it's definitely a bit on the crumbly side. Instead of the raisins I put in two cups of diced unpeeled apples. I also used apple pie spice (2 tsp) instead of cinnamon, concentrated apple juice, and omitted the sugar.

Old Fashioned Stuffing

This is a simple but very delicious recipe. I used it as a casserole top crust and the excess I baked and topped with shredded cheddar cheese just long enough to melt the cheese.

Alaska Salmon Bake with Pecan Crunch Coating

This is a quick and delicious way to make salmon. It would probably work with chicken as well. Definitely be sure to layer things on the salmon with the honey mustard mixture and then the pecan mixture on top. I noticed a few people say that they mixed theirs and though I haven't tried it that way, I doubt it would hit the palate the way the recipe intends if it is mixed.

Oatmeal Whole Wheat Quick Bread

This is an excellent recipe. It was easily adapted to a bread machine. First of all double the recipe so that it makes a regular sized loaf of bread. I also added two eggs. Just put two eggs into a two cup measuring cup and beat well. Add milk to make two cups. Put the milk mixture into the bread machine along with the oil and honey. Add the processed oats, flour, baking powder, and salt. I also added some fennel and sesame seeds. Finally, use the quick bread setting on the bread machine.

Chocolate Oatmeal Cookies

Excellent cookies! I substituted cinnamon chips in place of the chocolate chips just to give it an extra cinnamon kick and it worked out really well. I'll try it again sometime with the chocolate chips. The dough is thick and a wooden spoon doesn't really let you mix the oats and chips evenly so to really mix this well kneed the dough with your hands just before spooning onto the cookie sheet.

Chicken and Dumplings III

I had some broth I wanted to use up so I only made the dumpling part of this recipe. Previously I have only made Jiffy Mix dumplings and I wanted to make them from scratch this time to see if it would be any more difficult. I was very happy to find that it was as easy as it seemed in this recipe to make them.

Yellow Squash Casserole

I wanted to incorporate more flavor into the dish during the initial cooking stage so instead of cooking the squash and onions in water I sauteed them in a small amount of oil in a large nonstick skillet and added the salt and pepper to the pan. When it was tender-crisp I deglazed the pan with some white cooking wine and let that cook down until the squash started to caramelize slightly. After that I followed the recipe instructions to get everything mixed together, but instead of using a cake pan I used the bottom of a dutch oven. I also added freshly ground white pepper in addition to the black pepper. With those changes this recipe is definitely five stars. As is, it is definitely a good solid four star recipe, however.

Zucchini Brownies

Nacho Cheese Sauce

You can use any kind of cheese in this recipe, it doesn't have to be American cheese. I used part of a bag of Mexican shredded four cheese blend, and some Colby longhorn cheese because that is what I happened to have on hand and it turned out wonderful.

Strawberry Pretzel Salad

The proportions seemed off in this recipe, even after I added extra whip cream and strawberries on top of the gelatin layer the pretzels still seemed overpowering. Next time I intend to try it with graham crackers instead to see if the tastes go together better.

Orange Chicken Stir-Fry

I used this recipe to base something I wanted to do off of. I preheated my pan and put in some oil, onion, and garlic then I diced my chicken and rolled it in cornstarch. I added the chicken to the pan and let it cook while I zested an orange. When the chicken was about two thirds of the way done I added in the juice of one orange and the zest. I sprinkled on some ginger, soy sauce, and white wine (about 1/2 cup). I let that cook down until it made a nice thick sauce. I only rated this recipe three stars because I feel it was really missing some key ingredients (garlic, orange zest, white wine).
