Avocado Quick Bread

I love avocados, but I really am not sure how they can be used other than guacamole or sliced in a salad. Recently I ran across a recipe on this site for "Avocado Quick Bread" and I was extremely excited about trying it. I must have been too excited to do my usual double checking before printing the recipe (read the recipe ingredients thoroughly and at least skim a bunch of reviews both negative and positive). If I had, I would have realized that almost everyone said that this bread does not taste anything remotely like avocados. What it did taste like, was a loaf of sugar and spices. I wound up salvaging it by crumbling it up and pressing it down into a cake pan firmly and topping it with pistachio pudding.
At least it gave me a good idea for a fun st. patty's day treat - green food coloring in a cake or quick bread with pistachio pudding for frosting. I am even going to find or make a shamrock stencil and sprinkle green sugar crystals on the top to decorate it. Even when we have disappointments in our lives and in our cooking, if we look deep enough we can find a way to turn it into a triumph.
