About this Cook
My favorite things to cook
My specialty is cheesecake. I have a reputation for making the best cheesecake around and everyone is always trying to challenge me to a baking cook off.
My cooking triumphs
My husband tells me that I am a better cook than his mother. He was unwilling to try a lot of new foods when I first met him, now he will eat anything as long as I cook.

Super-Easy Rocky Road Fudge
quick, easy and oohhh so good. I needed a dessert for work so at 11:00 at night I made this and it was ready in the morning. Everyone gobbled it up. It is in my permanent file.

Canadian Cedar Planked Salmon
Fantastic recipe! We had it for a BBQ with the inlaws and it was a big hit. They thought I had spent hours in the kitchen cooking but I found it easier to do than home made burgers. The prep time is minimal, if you chop the onions the night before, the hardest thing to do is to remember to soak the plank the night before. I turn one burner off on my BBQ and place the plank on the other side. I served it with grilled zuccini and mushrooms that I placed on the side the burner was on. Super easy gourmet weekday supper.

Rhubarb Cobbler
I made this in a ceramic pie plate that is a bit bigger than a deep dish pie plate and it was the perfect size. I made mine with frozen rhubarb so I omited the water when cooking the fruit. I pre-baked it before supper and then popped it back into the oven during supper so that it would be nice and hot for dessert. Everyone loved it.
