Chicken and Bow Tie Pasta
4 out of 5 stars because i made quiet i few changes. but it turned out FANTASTIC. mother in law and husband were raving about it. i cut the chicken into strips, seasoned it with mesquite seasoning and browned it in olive oil once i turned off the heat, i put in the left over penne i was trying to get rid of from my fridge (it warmed it up nicely) . at the same time i threw in half a diced onion and frozen broccoli in another pan with little chicken broth, minced garlic and some red pepper flakes until it boil then turned down to med-lo heat until i like the texture of the broccoli. i threw in strips of roasted red peppers before i turned the heat to low, to melt some cream cheese and onion dip into the veges. it was super thick so i thinned it out a tiny bit with the chicken broth. finally tossed the contents of vegie pan into the pasta and chicken, stirred and served. note: this turned out very "Different tasting" to what we've ever had.. the combination of flavors were unusual but everybody at dinner loved it anyway.

Mexican Rice II
this was a good basic recipe. it tasted pretty much the same as you can find in mexican restaurants around here. and my husband was happy as he said "it actually tastes like mexican rice" and was pretty impressed. i thought it was a little too wet still. but thats okay. iwould just reduce the broth a tiny bit next time.

Broccoli Casserole III
i liked how easy this dish was to make, it looked pretty when it came out of the oven. i really wanted to like this dish but it was a little to rich for me. My husband said it was like eating a stick of butter. My daughter is crazy about broccoli but she just kind of picked at it and didn't eat much of it. if i had to do it over, i think i would probably lessen the topping and add in onion or some other vegetable with the broccoli. i would also think about just using fried onions instead of the crackers. the cheese was also just too... it just screamed CHEESE. don't get me wrong, i love cheese but this was over kill. It would probably do better with milk or canned soup such as cream of mushroom or chicken in addition with a lesser amount of cheese mixed into it. the casserole also needs different spices in my opinion... at least some garlic and pepper.
