Mexican Bean Salad
One of the best bean salads I have ever had. I have not had anything like it before. It reminds me of one of a Tex-mex infusion side dish. So Yummy, so easy!

Sweet Corn Cake
Great Great Great! I look the foil off the last 5 minutes to allow the cake to brown. It was just my personal preference.

Mexican Rice II
I thought it was okay. If there is less oil then I think it could be better. My husband loved this considering he does not like Spanish/Mexican rice. He said it was fresh tasting because it was moist and not dried out.
