Mediterranean Medley Salad

We loved this salad; especially the olives and feta cheese. Hubby went for seconds. I didn't have fresh basil so I used dried. I'll make this one again, thanks!

This is our favorite "go to" recipe for meatballs. I love to make this with mashed potatoes since the sauce is great over it!.. I add a T of brown sugar and a dash of worcestershire to my tomato sauce. Yum!

Artichokes

I just put mine right in the water with a T of veg. oil to soften them and 1T lemon juice. I left about 2 inches of the stem on because it is good to eat. Mine were large so I had to simmer around 30 minutes. I also put the garlic slices in the water not inside the artichokes because I thought it may be too strong for my boys. Good with mayonniase on the side! :)

Slow-Cooked Sirloin

Delicious.. I seasned beef well before searing and then placed over the onions in the slow cooker.. I skipped the peppers but added mushrooms during the last 30 minutes. I added an extra cup of broth for more gravy.. I cooked it on high setting for 3 hours; the meat was fork tender, juicy and flavorful.. Served with mashed potatos w/the mushroom gravy and corn.. :)

Egg Salad I

I'm sure I boiled mine longer than specified.. I halfed the recipe but not the mayonnaise or mustard since we like it creamy. I used about 1 T each with 4 eggs. I also used onion powder because I have picky eaters.. It was very good! Thanks!

Peachy Bread Pudding with Caramel Sauce

OMG!.. To die for!.. I made this as the recipe stated but added maybe an extra cup of French bread to use it all up and canned peaches. It was delicious; I added some whipped cream and dash of nutmeg on top for presentaion... :)

Crispy Rosemary Chicken and Fries

Hubby said this was a keeper and he liked the flavor... I used boneless skinnless thighs, but I'd like to have a nice crispy skin on next time... Also the potatoes didn't crisp even with the basting; still it was very good! :)

Fresh Tomato Salsa

I let my son pick the peppers and Woooah was it hot!.. I'm more of a mild salsa lover, but the rest of the men in the house like it hot!.. I only used 2 peppers too! :)

Tater Tot Bake

OK, I did change it up a bit but the DH and I loved it even more than the kids! lol.. I changed the soup to condesed tomato. I added 3/4 can of water and one beef buillon cube, some garlic powder, Worcestersire sauce, cayenne, green beans and corn to the recipe. Put a layer of tater tots on the bottom of the baking dish then the meat/veggie mixture over it and ended with tater tots. I baked at 425 until my taters were done about 30 min. then covered with the cheese and baked another 5 min. Next time I'm going to try to thicken the sauce with a little cornstarch only because the bottom Tots were a bit on the mushy side.. Very good though!...

Easy Batter Fruit Cobbler

The flavor was really good! I used 1 12 oz. frozen pkg of mixed berries as the recipe suggested. I thought there was a little too much fruit verses cake. I would actually increase the batter next time to 1 1/2 times for the amount of fruit I used. Being that my fruit was frozen it turned out a bit mushy and I didn't like the seeds in the raspberries.. My bad though!.. Over all I think with the changes I said I would really like this!~

Chicken Rice Skillet

This was very good but I have to admit that most of the flavor in mine came from the pre-cooked rice in a bag I bought (2 bags of Safron flavored Archer Farms-Targets').. I added frozen green beans and celery; simmered 5 minutes then added some corn the last few minutes along with the rice. I think the chicken was bland even though I sprinkled extra lemon pepper on top of it.. It needed to be seasoned before cooking IMO... I ended up cutting it up and mixing it into my rice because the rice was very flavorful!.. :)

Bill's Sausage Gravy

This gravy is really good; I've made it before and I like to add a bit of sage or poultry seasoning a dash of cayenne pepper, and a dash of nutmeg to the milk/flour mixture. I didn't need to add the butter because I had enough pan drippings. Thanks!

Reuben Sandwich I

This was good!.. I made my own corned beef; I also liked the mellow taste of the mozzarella cheese verses the strong flavor of Swiss!.. I sliced it as thin as I could. DH put sourkraut on his and I put coleslaw on mine!.. Grilled to perfection! Delicious!..

Southern Potato Salad

Very good, I changed it slightly; for one, I couldn't serve warm because I made the potatoes the day before. I also omitted the garlic because I worried it would be too strong so I added onion and sprinkled some cayenne on top instead of the usual paprika; we like a little spice in ours!.. Thanks!

Flourless Peanut Butter Cookies

No one cared for these in my house. I noticed another reviewer also said that they were too crumbly; the sugar tasted grainy like it didn't dissolve. I felt like I was eating sand. Thanks but I'll look for a different cookie next time!..

Key Lime Cake II

This cake was so good that I had to give it 5 stars even though some of the directions left me wondering... It didn't specify how long to mix or how long to cool before removing from the pan.. Since it said pour glaze over warm, I tried removing my cake from my bunt pan and my cake fell apart!.. Next time I'll wait until almost cooled. Very good though, I added a couple drops of green food coloring. I loved it!..

One Skillet Corned Beef Hash

I used my leftovers from St. Patty's Day.. Corned Beef, red potatoes and onion.. Sprinkled on some garlic powder, salt, pepper and cayenne. I wasn't sure about the cider vinegar so I left it out!.. So good with eggs for breakfast!..
