Amazing Chicken

Great recipe for really moist chicken!.. I added some spices to my mayonnaise (cayenne, garlic salt, black pepper and onion powder). I used the chicken tender strips and baked on a broiler pan for 22 minutes Everyone enjoyed them...

Chile Rellenos

Yum this was sooo good!.. I was very proud of myself for attempting this with fresh poblano peppers. I first roasted them under the broiler until bubbling and the skin has black spots, stuck them in the plastic bag to steam awhile then peeled the skins. Split them and gently took out the seeds. Stuffed with Monterey Jack cheese and stuck tooth picks through the peppers making sure to go though the cheese also to hold them together. I also did the whipped egg white which I folded the yolk into. My only problem was that the batter didn't want to stay on the pepper because of the flour barrier around it; maybe I put too much flour I'm not sure. The last two I fried I left the flour off. I loved the taste of the batter! Delicious and not as hard as I had thought! I will most definately make these again but maybe buy the whole Ortega chilis so I can eliminate one step!.. Served with canned green and red sauce.

Butter Whip Frosting

The flavor was great; I omitted the almond extract because I didn't think it would work with my dessert. My only complaint is that the frosting didn't seem to hold up to warm temp, I had to refridgerate them so the frosting was very stiff when cold!

Sizzling Sherry Shrimp with Garlic

This was good; I added half butter half oil because i like the flavor butter gives to the food. I think I'd omit some of the paprika next time because it overpowered everything else imo!.. All the other flavors worked well though!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Yummy!.. I really wanted to use up some Pillsbury cookie dough I'd purchased at our dollar store; it was Cinnabon sugar cookie flavored. I used yellow cake mix and baked for 22 minutes. The middle wasn't super gooey but I was happy with it!.. A bit too sweet for me but the kids ate them; I'd also make the dough part smaller inside next time since I'd like more cake.

Chicken Enchiladas

Following some advice I used more sauce; I poured some on top and they were very good!.. After sprinkling the chicken mixture over the tortilla I then added cheese generously inside before rolling. I also sprinkled more cheese on top of the dish before baking!..

Roasted Chickpeas

I've been wanting to try these for sometime now and glad I did!.. I followed directions but added a little onion powder as well. I over did my garlic powder, my fault! I think after making them once I'll know by color for next time. The ones I like best were slightly chewy in the center but crisp outside and were probably done at 35 minutes but I baked mine the full 40.

'So This Is What Heaven Tastes Like!' Cream Cheese Bars

Yum!.. I've been wanting to make these for some time and finally did! I only made some minor changes due to what I had: marschino cherries, pecans, 1 1/2 cups of chocolate chips and baked for 40 minutes as others suggested. I know I'll be making these over and over again! Thanks CB.

Apricot Chicken with Balsamic Vinegar

This was very tasty! I went way off track so it's hard to really review but all the flavors were wonderful together! I didn't use the apricot preserves because I didn't have any so I used 1 cup applesauce with a T of strawberry preserves. I sprinkled some cayenne over the chicken along with salt/pepper for heat. I don't know why but the texture of my meat was not great; it had a texture of boiled meat, like there wasn't enough oil in the sauce. Although I did brown it first in evoo. Wish I knew why that happens with breast meat sometimes. Maybe with thighs that wouldn't have happened. My hubby and I would most definately eat this again but it was not something the boys even wanted to try!..

Barbeque Chicken

Delicious!.. I was in such a hurry to make dinner that I didn't realize I was supposed to take the skin off; Since I doubled the sauce and it was on the thin side I just left the foil off for about 20 minutes then I turned the oven down to 350 keeping the foil off because I wanted the skin to crisp. I spooned the sauce over every 15 minutes and then when the chicken was done (about 40 more minutes) I took it out of the sauce, poured it into a smaller sauce pan and skimmed off the fat from the top. I then thickened with flour/water mixture and poured it back over the chicken... Really tasty recipe! :)

Scrumptious Seafood Linguine

Yum!.. I actually used a lb of dry thin spagetti and about 1 +1/2 cups of half and half which I thickened with milk/flour mixture; 2 cans of drained clams and 1 pound of frozen cooked shrimp... Doubled the garlic because we love food garlicky and probably used about 5T of flat leaf parsley, sprinkling some over the top when I served it!.. My family likes heat so I sprinkled some cayenne over each dish as well!.. I already have requests for this again! :)

Dirty Rice

WOW!~ So good, I followed as close as I could having to sub. very little: red bell pepper instead of green, 1/8 tsp cayenne pepper instead of pepper flakes and I used other reviewers tip of 1+1/2 tsp paprika and 1/2 tsp turmeric for the annatto powder. I also just used the whole cans of black beans and corn so not to have leftover in the fridge... Everything just enhanced this recipe!.. The crunch of the nuts was good and the twist of lime, red onion and cilanto all came together pefect! I didn't eat the sliced red onions though, just put it just for presentation. Thanks for a great recipe!..

Slider-Style Mini Burgers

These were delicious! The kids said I should make them all the time! DH said they taste like White Castles!.. I chopped up a small onion real fine and simmered it into my meat,skipped the soup mix. Only 4 stars because with all the mayo and cheese they were quite rich and I could only eat two; next time I may cut it back to half the cheese and mayo!.. I actually used one package of rolls(12) with half the filling for dinner and still had the other package of rolls and half the filling for the next day.

Greek-alicious Pasta Salad

Sherry Chicken Curry

Very tasty!.. I also added some cubed potatoes and red bell pepper, this also stretched it further since I didn't have that much chicken. I left out bouillon and cornstarch and added a dash of worctershire and about 1T fresh squeezed lime juice, 1T brown sugar to the sauce, and cayenne. I sprinkled some parsley on top; wish I had flat leaf or cilantro because I think it would be really great! Thanks

Strawberry Spinach Salad II

Yum!.. The dressing was awesome; I used pomegranite balslamic vinegar and added a tiny dash of dry mustard mixing it in well with the other ingredients. I find all spinach to be too soft for my taste so I cut up some Romaine as well. Toasted and sugared the pecans in a pan and they added a little more sweetness since my strawberries were a bit tart. I served this as a main-course so I added grilled chicken! I could eat this all the time it was wonderful!.. :)

Gelatin Poke Cake

Very moist and delicious!.. I used "Funfetti" cake mix and topped it with "Whipped Cream Cream Cheese Frosting"... This will be a huge hit on 4th of July!.. I will use red and blue gelatin!.. Thanks!

Whipped Cream Cream Cheese Frosting

Wow.. My measurements were a bit off because I was using what I had on hand; 8oz of heavy cream whipped and then I added just about 1/4 cups sugar into the cream, whipped it and then threw in about 10oz. of whipped cream cheese and continued blending in same bowl.. I didn't add any vanilla because I like the flavor of cream cheese! Very good on my poke cake... Thanks!
