Aunt Fannie's Dinner

Mmm reminded me of a Goulash we made in "Camp Fire Girls" I used about 8oz. of macaroni with 1 pound of ground beef. I threw in some diced celery and onion powder instead of onions for the kids sake. I added some chili powder, a dash of cayenne and worctershire sauce too; I just knew what would make this 4 star into a 5 star recipe! When it was ready I put it in a casserole dish and sprinkled cheese on it! The kids will eat anything with cheese on top! :)

Chicken Stock

I only had a meaty chicken carcass but it worked fine with a lighter taste more like broth than stock!... I'm so happy to be making my own chicken stock ( It's so wonderful to know I'm giving my family home cooked soups stews without the added MSG in cubes and cans! :)

Dijonnaise Chicken

I changed it a bit for what I had on hand and it was wonderful! Seasoned the chicken breasts well with garlic, salt, pepper and a dash of cayenne... Browned them quickly in the olive oil. I substituted worcershire sauce for the lemon wich gave it some zing. Then I baked with the Dijonnaise sauce without the oil. Good!

Roast Chicken with Cracked Peppercorn Sauce

Yum!.. The sauce was wonderful and I used Sherry instead of Vermuth; I did have to thicken it because I used half and half instead of whole cream. I also took another tip and poured off my liquid into a saucepan and then left the chicken uncovered for the second hour (6lb chicken) to brown the skin. Really good thanks! :)

Seven Layer Salad

I thought the salad was the best part of our meal!.. I did change up the vegetables for what I had and also for what others didn't like; NO onion! I forgot the cheese which I did have but felt that's ok since the dressing was full of parmesan and I prefer that flavor. I used Romaine, tomatoes, cucumbers, celery, broccoli and bacon. To the dressing I added salt, pepper and a dash of worcersershire sauce. The only changes I would make would be to put the dressing on the lettuce and end in something pretty like tomatoes or bacon if I'm serving to guests.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

I didn't make the sauce and I made some muffins with a large piece of hot dog and others with small pieces cut up in them... They had mixed reviews only because some in our house don't like cornbread.

Island Shrimp and Rice

This was so tasty! My only problem with the recipe is that the rice overcooked. Most white rice is done at 20 minutes. Here are some changes I had to make due to what I had. No broth, just water, added 1/4 can tomato sauce 2 whole chopped tomatoes, hot sauce, dash of garlic powder, and Old Bay seasoning!.. It was spicy but delicious!.. I will try to figure out the rice problem because I want to make it again.

Emily's Excellent Taco Casserole

I loved this! More like taco salad for me! Easy because I didn't have to simmer ground beef and taco seasoning! I used two cans of Amy's Organic Chili. Served with lettuce, tomatoes, sour cream, salsa, avacado and my own secret sauce for dressing!

Busy Night Turkey Taco Soup with Avocado Cream

Really easy and delicious!.. I added a dash of cumin and squirt of fresh lime. I used leftover carne asada beef and cut the salsa down to 1/3 cup of home made salsa which was plenty for us. I only had regular corn and a can of Hormel Chili for the chili beans. I also sliced some avacado to put in as well and made the avacado cream which didn't make a huge difference imo you can just add the avacado and sour cream seperatley. Hubby loved it!.. :)

Swedish Chocolate Balls (or Coconut Balls)

Great!.. 5 stars for no-bake, tasty, chewy and for making me eat oatmeal!.. I wasn't sure if I'd like oatmeal raw!. I was worried they'd be hard to chew but they wern't; tomorrow they may soften up a bit more but I like them as is!.. I rolled about half in the coconut and then some in chocolate sprinkles and some in powder sugar; I also used "Lindt 85% Cocoa Bar" (melted) instead of baking chocolate because I had some. I added about 1T of rum in the last half of the batch for the grownups; the rum/powder sugar ones were my favorites! Thanks I'll make these during the holidays!..

Anniversary Chicken I

Hard to review since I changed it! I was in a hurry and forgot to pre-brown the chicken; instead I placed in a bowl with the ranch and 1T of worcershire instead of the teriyaki sauce, salt, pepper and a dash of cayenne . Baked for 30 minutes on a baking pan, sprinkled with cheese and a little bacon bits then baked another 5 min... wonderful!..

Peach Berry Cobbler

This was good! Everything was perfect... Simmered the fruit, brown sugar and water sauce with 2T flour since I didn't have cornstarch and it thickened up just right in about 3-4 min. Hubby liked it; I thought It could use maybe 3/4 cup sugar instead of only 1/2 as called for but maybe it was because I used peach/strawberry mix and strawberries tend to be a bit tart.. The only thing that would have made ours better was some ice cream or whipped cream!.. :)

Scim's Fettucine Alfredo with Shrimp

I put my 1/2 stick butter in the pan and a few T of flour to make a rouix then whisked in half and half instead of heavy cream; added some garlic powder and salt, pepper and onion powder and a jar of mushrooms... I didn't have any fettucine so I used mini farfalle; I think they meant to use raw shrimp since the directions have you cook so long but I added my cooked shrimp during last few minutes and just heated until they were hot. Sprinkled in some fresh parsley and parmesan cheese! Thanks

Scottie's Chicken Tortilla Soup

We've tried a few "Chicken Tortilla Soups' on AR and this was really good! I didn't have brocoli so I added a can of green beans! I put in about 1/2 cup of salsa for more spice cuz that's the way we like it!.. I don't know that I loved the green beans, but since they weren't part of the actual recipe I'll consider it my mistake! A close runner up to my favorite which is "Chicken Enchilada Soup" Thanks! :)

Changed these up with the spices my Mom used (Assyrian style) with 2 lbs of cooked and crumbled meat (1-lamb, 1-beef) only 1/2 cup uncooked rice (it expands), added my spices: fresh dill, basil, onion, salt, pepper and a dash of cayenne pepper, (left out curry)!.. I poured tomato sauce/water over top, dotted with butter and fresh minced garlic. Baked for about 1 1/4 hours covered at 350.

Creamy Caramel Flan

Delicious!.. I followed the recipe exactly and found this wonderful in texture and taste! The cream cheese gives it almost a cheesecake taste while you can still taste the eggs but like traditional flan which is more eggy tasting imo! Also note that the sugar will clump up and get crumply before it begins to melt but it should be liquid in about 3-6 min. depending on how hot your burner and pan get. Once it's liquid and caramel in color it's ready so cooking it longer will make it too hard; pour into pan quickly because it hardens really fast being carful not to drip any on yourself like I did (ouch)... I was able to get it spread around the bottom of the pan but there wasn't enough sauce or time to get it up the sides before it hardened. The sauce will harden but will turn back liquid when the flan is ready! I'm going to make this when my Latino side of the family comes over; I think they'll be impressed! :)
