Big Ed's Cajun Shrimp Soup

Could have been great but with my mistake it was a bit salty! I'll make this again and follow directions more closely next time! It was not a pretty soup!..

Raspberry Oat Bars

These were awesome!... I used an 8x8 inch pan because I wanted them thicker and baked about 27 minutes but probably could have taken them out at 25 since they were getting pretty brown. Delicious butter flavor and not at all too salty; I used sea salt. Drizzled some glaze on top which gave it a weird flourescent color that I didn't love but that was my fault!.. I will definately make these again! Oh yeah, I strained the raspberry jam because we don't like seeds. :)

Beer Butt Rosemary Chicken

I didn't add vegetables to mine; I think it may just be our family but this was just ok for us.. We never really get enough flavor with roasted chicken and I always feel a bit let down after all the work that goes in them. I followed the recipe exactly and it was difficult to get the slipery chicken on top of the beer can without the oranges falling out. I think I will invest in a roasting rack that allows you to put the beer can in the middle. Maybe I need to marinade my whole chickens before baking... I don't know! I can say it was moist!

Tuna Noodle Supreme

Good; I changed the vegetables to suit my family's picky eaters. I used onion powder, green beans, olives and celery... They still picked them out! It was a nice comforting dish; hubby said it needed to be a little creamier, so next time I'll add less sour cream and more mayonnaise!

Country Fried Steak and Milk Gravy

I skipped the eggs in this and just dipped in the flour, adding paprika with salt and pepper to it; I used vegetable oil to fry the steaks. I also added a bit of paprika and a dash of rubbed sage and more salt and pepper to my milk gravy! Delicious!

Amazing Italian Lemon Butter Chicken

Mmmmm all the flavors went so well together; I do think they need to add "Pasta" in the name to be more accurate. I changed a few things in the way I prepared it. I didn't mix the chicken into the sauce but saved the sauce to pour over the pasta after plating. I also cut up my chicken before frying and pre-cooked the bacon because I like bacon crisp. I didn't use capers since I didn't have any but will next time; so good and hubby loved it! :)

Chicken Fajita Melts

Mmmm good! My husband devoured three pieces of this. I cut them a bit smaller though; I also topped them with avacado slices. For my fussy eaters, I made a few with only the meat, cheese, and salsa. Great idea LMP!

Lamb Shank Braised in White Wine with Rosemary

This recipe was easy and taste awesome! I used Sherry in place of the wine and addes some petite red potatoes during the last 45 minutes they simmered... After it was done I took out the meat and potatoes and thickened the sauce. YUM!

Cabbage Patch Stew

I love this recipe and have made it many times now! I used black beans instead of ranch and added a 1/2 lb of spicy ground pork with my ground beef; simmered the onion and celery into my meat. Substited carrot for the bell pepper. IMO You really don't need to simmer this all day!... I simmer about an hour until veggies are done. Taste even better the next day!

**** For people with SOY ALLERGIES; Most bullion has MSG and balsamic vinegar has naturally occuring msg same as soy!... I get migraines and have done research. You may still be sensitive to this recipe. ****

Serbian Ground Beef, Veggie, and Potato Bake

I didn't expect the hubby to give as much praise as he did over this recipe; he isn't usually excited about casseroles. The changes I made were to use mushrooms in-place of the peppers and I mixed in about 2T of flour into the meat mixture to thicken it up a bit. :)

Chicken Biryani

I used the recipe for the chicken but not the rice since I used a rice cooker. I also used chicken thighs instead of breasts because it's what I had. I did use all the spices and this was very tasty!.. :)

Chicken Meatballs and Spaghetti

Mmmm really good; I used ground turkey instead of chicken and cut the seasoning back a bit. I always roll my meatballs and then bake them on a baking sheet before adding them to the sauce. 350 oven for about 25 min. I used regular instead of whole wheat spaghetti; everyone really liked this spaghetti dinner. I didn't tell them it was turkey either!

Parsley-Stuffed Flank Steak

I first seared mine in some olive oil, carfully rolling over until all the sides were browned. This was fairly easy but I can never get this cut of meat to turn out tender!.. It was good but I was hoping for great!

Szechwan Shrimp

My husband really liked this and wanted more so next time I'm going to double this recipe. Fed the four of us but small portions. I subbed broccoli for the green onions and sugar for the honey and used fresh grated ginger (about 2T). Instead of water I used fish sauce and also added about 1T of Tobasco to my sauce as well. I had some fresh chilis so I chopped up those and sauted them with the broccoli. Cut back the chili flakes to 1/4 tsp. This recipe was fairly easy and delicious!Thanks! :)

White Frosting

I love this recipe and have been using it for years! So light and fluffy also not too sweet; it really lets the flavor of the cake shine! I like it on dark chocoalte cake; it looks so pretty! What this recipe doesn't state is that the milk/flour mixture has to thicken (like paste)before it's done; maybe that's why some peoples didn't work...

Best Beef Stroganoff

MMmmm good!.. I made a few substitutions, sherry for the wine and canned mushrooms. I cut the lemon back to about 1T and seasoned my beef well with garlic, salt, pepper and cayenne (my favorites). I had some homemade chicken stock in the freezer and I used that; sprinkled some flat leaf parssley on top when I served it. This is a hubby pleaser!..

Aunt Fannie's Dinner

Mmm reminded me of a Goulash we made in "Camp Fire Girls" I used about 8oz. of macaroni with 1 pound of ground beef. I threw in some diced celery and onion powder instead of onions for the kids sake. I added some chili powder, a dash of cayenne and worctershire sauce too; I just knew what would make this 4 star into a 5 star recipe! When it was ready I put it in a casserole dish and sprinkled cheese on it! The kids will eat anything with cheese on top! :)

Chicken Stock

I only had a meaty chicken carcass but it worked fine with a lighter taste more like broth than stock!... I'm so happy to be making my own chicken stock ( It's so wonderful to know I'm giving my family home cooked soups stews without the added MSG in cubes and cans! :)
