Caramelized French Toast

Reviewed: Feb. 2, 2009
Tasted good, but the caramel sauce was too sticky to eat! Directions say cook until sticky, but I think when it starts to bubble up it's about done!.. I let it simmer a couple more minutes and it was sticking to our teeth.. I drizzled over top of french toast!..

Simply Parmesan Chicken

Reviewed: Feb. 1, 2009
First time I served with marinara sauce, second time I didn't and I thought the Italian seasonings tasted too strong!.. I liked it better with the sauce and Mozzarela cheese!

Creamy Italian Dressing II

Reviewed: Feb. 1, 2009
I really loved this dressing!.. The garlic was kind of suttle but I love garlic so maybe I'll add more next time... So refreshing I ate two servings of salad instead of my main course!...

Baked Ziti II

Reviewed: Feb. 1, 2009
This was very good! Like other reviewers said though it wouldn't of had enough sauce but my package of pasta was only 14 oz. so that helped!.. Thanks I'll make this again!...

Big Soft Ginger Cookies

Reviewed: Jan. 27, 2009
The 2nd time I made them and they do come out thin but good!.. I used dark Karo syrup in place of the molasses so maybe that made them thinner. I'd like them to be thicker though... Thanks!

Chicken Teriyaki - It's a Secret

Reviewed: Jan. 27, 2009
Pretty good! I read a lot of reviews and tried to add some flavor with garlic and cayenne... Also some said it didn't taste like teriyaki so I used Kikkomans teriyakki marinade in place of the soy sauce since its main ingredient is soy sauce.. I think the reason not 5 star was my fault... I used lite mayo, also I did this under the broiler... I will try again and do it on the BBQ when the weather is nice!

Hollandaise Sauce

Reviewed: Jan. 23, 2009
I thought it was good and the consistency and lemon were perfect!... Only reason not 5 stars was it was a tad eggy tasting for me, maybe because I used extra large eggs. I didn't have 1/8 measuring spoon so I went with 1 drop worchesershire sauce...I will try cutting back yolks to 3 next time. Thanks!

Key West Chicken

I used the marinade for my bone in chicken thighs... I put them in my oven for about 1 hour with the marinade. I squeezed more lime juice before serving... Very moist.. I will try this on the grill during the summertime!

Banana Split Ice Cream Pie

Reviewed: Jan. 22, 2009
My family loved it! I used graham cracker pie crust, vanilla ice cream, and omitted the pineapple. I chilled for about 2 hours and it was perfect!.. Served with chocolate syrup, butterscotch, and canned whipped cream on top... I don't think they'll let me quit making this one!..

Cake Mix Cookies IV

Reviewed: Jan. 21, 2009
These were pretty easy and tasted good!... I cut the oil down to 1/3 cup and used a glass to flatten them before baking... Didn't bother to frost because I used funfetti cake mix with sprinkles inside the mix... Thanks!

Lori's Famous Crab Cakes

Reviewed: Jan. 20, 2009
I made these with imitation crab meat and didn't have any peppers.. I know, but I thought they were really good!.. The DH said not so great, but oh well!... Next time I'll buy some real crab! ** With imitation crab meat they would not hold well, I had to add all the bread crumbs to the mix and add another whole egg!

Chicken Enchilada Soup II

Reviewed: Jan. 15, 2009
Awesome!.. My family liked this even better than our usual Chicken Tortilla soup!... I followed reviewers advice and CUT THE MASA HARINA DOWN (or it will be too thick) to 3/4 cup, used half the Velveeta cheese (Nacho). Add a cup of CORN and a can of BLACK BEANS also 1/2 cup of SALSA... soooo good! We put sour cream, crispy tortilla stips, shredded cheese, salsa and chopped cilantro on top!..

Lemon Leek Roasted Cornish Hens

Reviewed: Jan. 12, 2009
These were great, but I did have to add a bit more seasonings to them... In the cavity I salt and peppered and added the poultry seasoning before I put in lemon and leeks. On the outside I rubbed with evoo then the poultry seasonings and sprinkled with garlic powder and dried rosemary... I placed on a bed of lemon and leeks as another reviewer suggested. Even the breast meat was juicy after cooking 1 1/2 hours. The whole family thought they were great and looked elegant!.. ** Picture was taken before I realized they weren't done enough; I baked another 30 minutes and the skin browned nicely!

Hot German Potato Salad I

Reviewed: Jan. 12, 2009
Awesome!.. I didn't have a lb of bacon, although I probably would have cut that in half... I used what I had which was about 3 slices, next time I'll use more. I also didn't have escarole, so I sliced up celery and added it to the hot bacon to cook a little towards the end. I also added salt, pepper and a little paprika for the top.. The flavors of egg, bacon, celery combined with the vinegar were delicious!.. The vinegar mellowed as it sat for a while... I will make this again!

Minestrone Soup

Reviewed: Jan. 9, 2009
I used Swansons reduced sodium chicken broth and added some hot Italian sausages to add more flavor and also to entice my hubby and boys to eat this... I cut back the cabbage to 1 cup but it was still pretty thick so I added about 4 more cups of broth. I left out the corn and added about 1 cup of kale I also used the small shell pasta instead of orzo. This was really good! *** (I tried to fine dice all my ingredients because I wanted this to look more like a soup than a stew, being careful not to overcook the veggies.)***

Curry-Coconut Shrimp

Reviewed: Jan. 8, 2009
We enjoyed this dish!.. I doubled the curry because I love curry and the coconut milk; I used 1/4 tsp of cayenne instead of the red pepper flakes. Other than that I followed the recipe and added just a squirt of lime juice at the end with salt and pepper. Pretty good but I have other favorites!

Caramel Apple Pork Chops

Reviewed: Jan. 7, 2009
These were awesome!.. The best pork chops I've ever had! I followed the recipe to a T except I added maybe a tablespoon of brandy to my apples as they simmered and doubled the sauce. If you don't want sticky caramel, don't simmer the sauce as long at the end.. I will definately make these again and again!

Fry Bread Tacos II

Delicious!... A new family favorite! My 12 year old ate 2 and would have ate another if I hadn't stopped him! The only change I made was to use refried beans because we love them!.. I will make this probably more than regular tacos now!

Shepherd's Pie I

Reviewed: Jan. 5, 2009
I took some reviewers advice and added more spices; garlic, worcestshire sauce, a couple dashes of hot sauce, pepper, and sage. I also used stew meat which I simmered until tender and added the tomatoes and onions to my water when the meat was almost done, skipping the oil. Some mixed veggies helped make this a well rounded meal. Thanks!
