Greek-alicious Pasta Salad

YUM!.. I liked everything about this pasta salad, especially the flavor of the greek dressing and feta cheese! I added some olives but it really didn't need them... Thanks Adzel!..

Sherry Chicken Curry

Very tasty!.. I also added some cubed potatoes and red bell pepper, this also stretched it further since I didn't have that much chicken. I left out bouillon and cornstarch and added a dash of worctershire and about 1T fresh squeezed lime juice, 1T brown sugar to the sauce, and cayenne. I sprinkled some parsley on top; wish I had flat leaf or cilantro because I think it would be really great! Thanks

Strawberry Spinach Salad II

Yum!.. The dressing was awesome; I used pomegranite balslamic vinegar and added a tiny dash of dry mustard mixing it in well with the other ingredients. I find all spinach to be too soft for my taste so I cut up some Romaine as well. Toasted and sugared the pecans in a pan and they added a little more sweetness since my strawberries were a bit tart. I served this as a main-course so I added grilled chicken! I could eat this all the time it was wonderful!.. :)

Slider-Style Mini Burgers

These were delicious! The kids said I should make them all the time! DH said they taste like White Castles!.. I chopped up a small onion real fine and simmered it into my meat,skipped the soup mix. Only 4 stars because with all the mayo and cheese they were quite rich and I could only eat two; next time I may cut it back to half the cheese and mayo!.. I actually used one package of rolls(12) with half the filling for dinner and still had the other package of rolls and half the filling for the next day.

Whipped Cream Cream Cheese Frosting

Wow.. My measurements were a bit off because I was using what I had on hand; 8oz of heavy cream whipped and then I added just about 1/4 cups sugar into the cream, whipped it and then threw in about 10oz. of whipped cream cheese and continued blending in same bowl.. I didn't add any vanilla because I like the flavor of cream cheese! Very good on my poke cake... Thanks!

Gelatin Poke Cake

Very moist and delicious!.. I used "Funfetti" cake mix and topped it with "Whipped Cream Cream Cheese Frosting"... This will be a huge hit on 4th of July!.. I will use red and blue gelatin!.. Thanks!

Zucchini Parmigiana

This was very good! It is a bit soft since there is no meat in it to give it substance. There was a bit too much topping on mine and not enough sauce; that part was my fault. I think I'd slice my zucchini a bit thicker next time too since the other flavors are strong; you almost don't even see or taste the zucchini in it which may be a good or bad thing for some!.. :)

Lemon/Raspberry Streusel Muffins

Yum!.. Since lminer said they weren't very lemony I added a tsp of lemon extract to my plain yogurt (what I had) along with the lemon zest!.. Still could have used more lemon imo. They were moist, light and delicious! Some family members complained about the seeds in the respberries but oh well!.. Thanks!

'I Hate Cucumbers!' Cucumber Salad

The salad was all-right although could have been a bit sweeter imo. My other complaint is that after mixing my vinegar and and mayo the dressing turned an ugly color and it started creeping into my cucumbers turning them brownish. After marinading a bit they didn't look very apetizing so I didn't bother bringing them to my Moms. I may try useing a clear vinegar if I make it again; imo thicker slices would hold up better since the thin ones got pretty limp!.. The picture shows right after I made it and before it sat in the fridge!

Four Cheese Margherita Pizza

This turned out really good!.. I actually had a bunch of frozen naan bread my mom had given me and it was wonderful; only had 3 cheese blend (no feta) which was ok since the kids may have not liked it. I sliced up some spinach on top along with basil, onion, red bellpepper and grape tomatoes. Yummylicious!

Glazed Salmon Fillet

The sauce was delicious!.. Sweet and spicy so a little goes a long way!.. This was definately restaurant quality imo. I soaked cedar planks to BBQ my salmon on the grill and then realized I was out of charcoal and ended up doing them under the broiler for about 10 minutes adding the marinade once after 5 minutes!.. It was perfect but I can't wait to do them n the grill next time. My sauce was a little grainy; I must not have simmered it long enough but still good!.. Thanks!

Exchange Gang Pasta with Shrimp

Delicious!.. I followed this recipe using Sherry for the wine because I love the taste. My shrimp were pre-cooked so I didn't need to cook them as long... I may try with yellow grape tomatoes next time and thicken just a tad since most of the sauce went to the bottom. Thanks Keri and Gang!.. :)

Easy Tomato-Basil Pizza

I only used tomatoes and basil because it was all I had and the kids wont eat anything when they see onions! Left the tomateos in slices for the top and used a split french bread loaf along with fresh basil from my herb garden!.. Thanks for a simple and good recipe! :)

Byrdhouse Mushroom Barley Pilaf

The flavor of this was awesome!.. I loved how the sherry flavor infused the whole dish but didn't taste like alcohol! I liked the crunchy barley but was too healthy for my kids who wont even eat brown rice!.. Oh well more for me! Hubby liked this as well! Thanks SunnyByrd!

Raspberry Almond Cake

Wanting to make this recipe I did some research.. I do believe the amount of baking powder contributes to the problems here!.. Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center. Too little baking powder results in a tough cake that has poor volume and a compact crumb.

Skewered Potatoes

If I could have given them more stars I would have!.. So good! I added more of the marinade each time I turned them on the grill and I had about 1 1/2 lbs of potatoes which worked out perfect. Don't forget salt and pepper!.. I will definately make these again!

Iced Tea II

I love iced tea!.. I used 5 bags, allowed mine to steep for about 20 minutes and it was great! I omitted the lemon juice but put sliced lemons on top! I used "Sugar in the Raw" Perfect for hot days like today! Thanks!
