Spicy Shredded Beef

Soooo awesome!.. I think a better name would be "seasoned shredded beef" since I wouldn't call it spicy! It was perfect in my soft tacos; served with rice, beans, guacamole, cheese... :) My only change was to add a tablespoon of sugar as another reviewer suggested when adding the tomatoes and an extra clove of garlic. The meat was so tender I just used one fork and it broke apart but wasn't at all stringy.

Lip-Smackin Tangy BBQ Sandwiches

I had some leftover carnitas (pork) and used this recipe tonight. My boys both love it. :) I like to shred my meat a bit on the chunky side but that's my personal preference. I don't care for stringy meat.

Chicken Spaghetti IV

So simple with one more cheat! One whole jar of spaghetti sauce with veggies already in it, added Tyson frozen pre-cooked chicken strips; let simmer. Meanwhile I cooked the Angel hair pasta, put in a casserole dish and added butter. When chicken and sauce was heated through I added parmesan and mozzarella cheese to the top. Let melt then poured over the buttered Angel hair. :)

Artichoke and Roasted Red Pepper Dip

It was all-right but there was a lot of this left over at Christmas; I did modify it some. I used a red bell pepper that I saute'd lightly, a bit more mayo and skipped the butter, seasonings (garlic/pepper/salt/cayenne). I also added one can of chopped water chestnuts for crunch . I wanted it to be cheesier like the hot spinach/artichoke dips you get at Chili's restaurant but this just tasted like hot veg. with mayo imo... I think it had most of all what it needed but maybe I'd add a cup of mozzarella to it!

Chocolate Walnut Fudge

This is "Old Fashioned Fudge" so having said that it is not Fool Proof! The directions say 5-oz can evap. milk so don't mistake that for a regular size can which is what I did... I had to triple my ingredients to make it work! BTW if your making lots changes to this recipe how do you know it really works! Rating 5 stars should be if you followed directions 100% and it worked! Stuffed Green Pepper

Yum!.. I changed it up a little with cooked diced stew beef; I also added garlic, parsley, cilantro, cayenne pepper for heat and a dash of olive oil to make the flavors more Greek style (omitted basil) which my family likes. I added cheese to the top after the were done baking for a few more minutes.

Divinity

Just finished making this recipe and I am optimistic!.. Having failed in the past at divinity, this recipies instructions were pretty easy to follow with the exception of how long to stir the sugar "until disolved" (was aprox. 3 min for me on med/low.). You don't want to keep stirring because it will turn grainy. The last step takes another 10 minutes with the mixer before it loses shine! I take my hat off to candy makers!.. Whew...the timing here is what is tricky... When done it's very thick/sticky and is hard to spread... I quickly put it in a buttered tin (8x8). It helped to use a piece of waxed paper to push it down into the pan... :) I can't wait to taste a piece of this tomorrow since most reviewers suggest it needs that long to set up right! Added walnuts. :) *** For all the mess it made I would double the recipe next time; doesn't make a lot!

Stuffed Acorn Squash

I changed a bit; used cooked stew beef mixed with cooked rice and added stew tomatoes in place of the ketchup. I added fresh parsley and a splash of olive oil; spiced it up with some cayenne, garlic, salt and pepper. Sprinkled some mozzarella cheese last 5 minutes. :)

Chicken Pot Pie VIII

YUM... I love that this recipe didn't use any "cream of soups"... I did purchase the pie crust because I stink at rolling out pie dough! For the chicken I boiled 4 thighs along with celery, carrot, onion, bay leaf, garlic, salt & pepper to make my own stock. I strained it and used the cooked carrots; added "cooked" green beans and potatoes... Super de duper! :) Message to self: 1/2 the roux ingredients, add potatoes and filling to roux, keep on low heat, add 1 tsp. rubbed sage, 1/4 tsp. thyme then add enough broth until desired thickness. Freeze remaining stock when cooled.

Spanish Hominy

OK I made this with a few tweaks but it's freakin awesome!... On the stove top: Saute'd onion and bell pepper in my olive oil/blend butter until soft, added 2 cans of the yellow hominy (drained) and cooked about 10 minutes on med/low until it began to slightly brown and soften up, then added 1/2 can Rotel (drained)and cooked bacon (bought that way)... Threw in more seasoning: a dash of cayenne pepper for more heat, cumin, garlic, salt & pepper; cooked on low for another 15 minutes... I skipped the tomato sauce and can of tomatoes completely. This is how my hubby's likes it, not saucy so it has more of a roasted flavor... Mmmmm wish there was more but I halfed the recipe for two of us and ate it for dinner. :)

Chicken Chow Mein

I have actually found the packages of noodles at my 99 Cent store but at Raleys they are also inexpensive (aprox. $1.49).. Of course like any experienced cook knows you can add what you like as well... I'm sure sliced onions, snap pea's, bok choy, spinach, baby corn, or other veggies would all work well. I recently brought this to my brothers house and even my Mom wanted the recipe! The Mandarin sauce is a nice little "cheat", it probably wouldn't be as good without it. There are similiar pre-made sauces that you could substitute; let me know what changes you make to make and if it worked!~ Happy Eating! :)

Pumpkin Bars V

These were good!.. I liked the texture; they were not quite as firm as a bar and yet not as light as a cake... I had a 12 oz pkg.(1 1/2 cups) Ghirradeli semi-sweet chips and felt any more than that would have been too much! For our personal taste they were slightly under sweet; we love sweets and since the chips are semi-sweet and the recipe doesn't have a lot of sugar, I would possibly switch to milk chocolate chips (mini's)!..

Best Fried Green Tomatoes

Mmmmmmm yummy! Made these again today; skipped the corn meal and used panko bread crumbs so I still got the crunch I was looking for!.. Awesome!.. If you are skeptical and think these sound weird but like other fried veggies like zucchini or tempura you will most likely love these!.. :) I find the green tomatoes that are fully grown but still green are the juciest and best flavor!

Steak Chili

Good recipe but I did modify; I used stew meat (1lb) which I cut in tid-bit pieces; doubled the beans. I cut the cayenne down to 1/2 tsp. and it was perfect to our liking! I also added about 1 cup beef broth then thickened with flour/water mixture when almost done ... A secret my mom gave me was to always add a pinch of sugar to tomato based recipes; it will cut the acid down... :) YUM!

Three-Berry Lemon Trifle

I used the basic methods and altered a few ingredients.. Over all it was delicous! I used pound cake which I spread a bit of raspberry preserves on one side. I used Greek lemon yogurt/ cool whip mix for the creamy layer and blackberries and blue berries. I didn't use the lemon juice or the sweetened cond. milk. For the topping I used some granola... YUM! :)

It's Chili by George!!

Today I was in the mood for Chili as we sat and watched the 9/11 10th anniversary coverage, it reminds me of the firefighters... Anyway I made some small adjustments because of preference and what I had. I used 1lb ground beef cut the chili powder to 3T; l also had to make some substitutuions for the sauce; I didn't have tomato juice so I used water and beef broth and used 29 oz. of crushed tomatoes. :)

Janet's Rich Banana Bread

Mmmmmm our family loves banana bread and this recipe delivered! I used all brown sugar instead of white. I also had lots of little mini bananas I got from the dollar store; I doubled the recipe so I put in aprox 2+ cups of mashed banana. Sprinkled nuts on top of one loaf and sugar in the raw on the other. *** If making gifts of the bread: The one with the sugar on top wasn't as pretty of a color/appearance wasn't shiny/smooth. The sugar left a bubbly look to the surface but it tasted sweet and chewy. :)

Peppered Cilantro Rice

This rice had a sublte flavor so I followed a few others tips and added some fresh grated ginger, cumin and lemon zest... I also added 1/4 cup home made vinagrette (olive oil/balslamic vinegar, squeeze of lemon juice). I agree with another reviewer to wait until the rice is done before adding the cooked veggies as to keep the color brite! Took to a pot-luck and served at room temp. Over all tasty recipe! THX :)

Asian Salad

I love this salad!.. added some canned chicken to make this a meal. I didn't have the slivered almonds this time but usually put them in along with some mandarin oranges and flat leaf parsley or cilantro... :)
