Chicken Chow Mein
About this Cook
Hi I'm Traci; I'm married to a wonderful man and I'm lucky to have two awesome boys! Cooking is a passion of mine probably because I love good food!.. Since I quit working a few years ago I'm cooking more. There really isn't a cuisine that I dont like; I enjoy trying new types of food and new recipes. I would love to go to culinary school and learn more if I ever have the opportunity; I do think I'm a good cook but there's always room for improvement. I enjoy photography and taking pictures of my food; the best part of cooking for me is when others enjoy eating n it!
My favorite things to cook
My boys have some favorites they like me to cook: Chicken enchiladas are in our usual rotation along with their other favorites, burgers, pizza and fries... My hubby and I have a more grown up taste and enjoy recipes like Chicken Marsala, Chicken Piccata on angel hair pasta and Cioppino. Everyone in the house agrees that cheesecake is the desert we prefer! :)
My favorite family cooking traditions
Whoever's birthday it is gets to pick their favorite dinner...
My cooking triumphs
Cooking all the food for my sister-in-law's baby shower...
My cooking tragedies
I forgot the garlic bread under the broiler and went upstairs to get ready for company; the smoke alarm was blaring when they arrived!..

Spicy Shredded Beef
Soooo awesome!.. I think a better name would be "seasoned shredded beef" since I wouldn't call it spicy! It was perfect in my soft tacos; served with rice, beans, guacamole, cheese... :) My only change was to add a tablespoon of sugar as another reviewer suggested when adding the tomatoes and an extra clove of garlic. The meat was so tender I just used one fork and it broke apart but wasn't at all stringy.

Chicken Spaghetti IV
So simple with one more cheat! One whole jar of spaghetti sauce with veggies already in it, added Tyson frozen pre-cooked chicken strips; let simmer. Meanwhile I cooked the Angel hair pasta, put in a casserole dish and added butter. When chicken and sauce was heated through I added parmesan and mozzarella cheese to the top. Let melt then poured over the buttered Angel hair. :)

Artichoke and Roasted Red Pepper Dip
It was all-right but there was a lot of this left over at Christmas; I did modify it some. I used a red bell pepper that I saute'd lightly, a bit more mayo and skipped the butter, seasonings (garlic/pepper/salt/cayenne). I also added one can of chopped water chestnuts for crunch . I wanted it to be cheesier like the hot spinach/artichoke dips you get at Chili's restaurant but this just tasted like hot veg. with mayo imo... I think it had most of all what it needed but maybe I'd add a cup of mozzarella to it!
