Pecan Pie Cookie Bars

Amazing! These are so easy to make and they taste delicious, just like pecan pie. This recipe is a keeper, I'm sure I will be making this several more times over the holidays this year. Thank you!

Italian Cream Cake I

This cake is delicious. My family gobbled it all up. The only thing I will change next time is to toast the coconut before using it - the raw coconut gave the cake a funny taste/texture. But anyways this recipe is definitely a keeper.

Butterscotch Apple Dumplings

Mmmmm this is so good! At first I thought it was going to be kind of difficult and time-consuming, but really once the apples are peeled and halved the rest just flies by. The brown sugar sauce doesn't taste exactly like butterscotch but it's still very good and it really compliments the apple taste. Also as an added bonus, my kitchen smells fantastic after baking this. I am going to serve these to my family tomorrow and I'll bet they're going to love them. Thank you Carol for the recipe!

Ratatouille

I have never had Ratatouille before so I have nothing to compare it to, but I think this dish is delicious and I will definitely make this again. I followed some other reviewer's suggestions and cooked the onions a bit to soften them up before throwing them into the mixture, and also I melted some mozzerella cheese on top. Yum!!

Grandma Johnson's Scones

Delicious! I didn't have any sour cream so I substituted yogurt, and the scones turned out great. They are a little sweeter than typical scones, I'm not sure if it's due to the yogurt or not, but either way this recipe is a keeper. My dough was a little too soft/sticky to roll-out and cut into triangles so I just dropped scoops of dough on to the baking sheet and made round scones. Also I used about 1 cup of raisins and 1 cup dried cranberries...Yum!

Cranberry Upside-Down Coffee Cake

This coffee cake is delicious! I have been experimenting with cranberries this season and this is my favorite recipe so far - the cake part tastes like coffee cake should, and the topping is nice and not-too-tart and tastes great with the pecans. Like another reviewer said, don't skip the step about putting foil around the bottom of the cake pan before putting it in the oven - the cranberry mixture will leak.

Lemon Yeast Puffs

I don't know what I was expecting, but these puffs were not that great, they were very dry and, other than a hint of lemon, pretty tasteless. In order to salvage them, I made a lemon glaze with lemon juice and powdered sugar, which at least added some moisture and flavor. I don't think I will make these again.

Love the Mama Lemon Bars

I love this recipe. I did take another reviewer's advice and add extra lemon zest and lemon juice, I about doubled what the recipe called for since I like my lemon bars extra lemon-y, and they turned out great! Also I doubled the entire recipe in order to use an 11x17 pan like it calls for - I tried to make the dough stretch enough to fill the bottom but finally I gave in and decided to double the recipe - I'm glad I did because I'm afraid the lemon bars would have been way too thin otherwise. Anyways, I brought them to work and everyone loved them - one guy took a couple home to his wife, and a couple of people asked me for the recipe. This is definitely a keeper!

Sour Cream Blueberry Muffins

This is a great blueberry muffin recipe. I made them for my family after the New Year and they all grumbled because they were trying to lose those extra holiday pounds and didn't want any sweets, but once the first person tried one, the rest followed, and pretty soon all of the muffins were gone, diets begone! The only thing I changed in this recipe is that I added a teaspoon of vanilla, just thought it needed it to make the muffin taste more sweet, and they came out beautifully. This recipe is a keeper, I am actually planning on making more muffins tomorrow since the first batch went so quickly.

Sauteed Portobellos and Spinach

This is a delicious side dish! Tastes like something you'd get at an expensive restaurant, but it's actually super-easy to make. I followed the recipe to the letter, except I didn't have any basil so I had to do without, and it was still fabulous.

Aunt Blanche's Blueberry Muffins
