Apple Banana Cupcakes
Mmmm so good! They are definitely more like muffins than cupcakes. I kept telling people they are "apple banana spice muffins" and everyone thought they were delicious! Don't be afraid to chop your apples into slightly larger pieces than the recipe calls for, I did and you really get that nice apple-spice flavor with every bite.

Chewy Coconut Cookies
Delicious! I recommend toasting the coconut a bit first, but that's just a personal preference.
