Cake Mixes from Scratch and Variations

I thought this turned out really good. I did make a few changes... I used flavored coffee creamer instead of milk, used 2 cups sugar, and used oil instead of shortening. I did mine as cupcakes, which are going to be turned into mini ice cream cakes, and they are sweet enough that I personally don't think they need any frosting on them.

Classic Red Beans N Rice

This wasn't a bad recipe, but certainly not the best I've had. I used sausage instead of ground beef, which gave it a little more flavor, but the beans were still very bland. Next time I'll just make the red beans the same way I make my pinto beans.

Neat Sloppy Joes

Both my husband and I thought these were really good sloppy joes. They were a little sweet for my taste, so next time I'll use a little less brown sugar. Other than that I won't change a thing.

I think that the next time I make this dish I will use more tomatoes and possibly some fresh cracked black pepper. It wasn't bad though and we will make it again.

Creamy Banana Bread

Can you say YUM! Both my husband and I love this bread. I used sliced almonds instead of the pecans and added a little extra vanilla and mashed bananas. This bread doesn't have a real strong banana flavor to it.

Chicken Pot Pie IX

Delicious! I made these as mini pot pies by making my own crust and pressing it into a muffin tin. I only baked them for about 20 minutes. They turned out wonderful. The only thing I would change is I would use less onion, but that is just a personal preference.

Classic Whole Wheat Bread

I just finished making this bread and tried a piece... I don't know that there will be any left for my husband when he gets home! The only thing I might change is going to be making one loaf instead of two, the loaves are a little smaller than what I like. With that I'll have to adjust the baking time and temp a little bit.

Shrimp Scampi V

I added a little bit of smoked paprika in with the garlic and it gave it a good flavor. Next time I think I will use a little less wine, but overall it was a good recipie.
