Quinoa with Carrots and Raisins

This is a keeper. I omitted the cilantro because I don't care for it. The flavors were a little strong for my 3 year old so I will cut the pumpkin spice in half next time, but for grown ups it's great!

Savory Cheddar Zucchini Muffins

These were ok/good. I agree with other reviewers that the muffins were lacking a little flavor. I'm vegetarian so I omitted the bacon (which may have caused the blandness)and used a dash of thyme & rosemary instead. I will try again using a stronger cheese like sharp cheddar or maybe even gorgonzola.

Basil Cream Chicken

Loved it! I used vegetable broth and added one minced garlic. Used a meat substitute (I'm vegetarian) and served over egg noodles. Yummers.

Strawberry Bread

This was really great. I followed some of the other suggestions to health it up and also addressed the "mushy" comments... Cut sugar by 1/2c (will cut a full cup next time), replaced 1/2c flour with whole wheat+ground flax seed, replaced oil w/ applesauce. I diced the strawwberries and added a 1 cup of strawberry puree. Froze nicely too!

To health it up for my preschooler, I replaced 1/4c of flour with whole wheat. Added 1 tbs flax meal and used applesauce instead of margarine. Good stuff!

Trail Mix Muffins

These were really good. Like someone else mentioned, this is a good base recipe and you can add a lot of different things to it. To health it up slightly for my preschooler, I replaced 1/2c flour with whole wheat + 1tbs of ground flax. I also replaced 1/2 the oil with applesauce. A nice breakfast muffin.

Pepperoni Polenta Pizza

My family really liked this recipe. I added a vegetable boullion cube to the polenta water, which gave it more flavorful. I pressed the polenta about 1/2" thick into a round baking dish and blind baked for 10 minutes before adding my toppings. I used a mild cheddar + some parmesan and Tofurkey Vegetarian Italian Sauasage. As someone already mentioned, as long as you know the polenta isn't going to come out like real pizza crust, you'll be fine. And this does *not* make six servings as a main dish; maybe 3-4.

Sweet Potatoes with Sausage and Peppers

Banana Nut Muffins

These were a hit with my toddler! To make them a little more healthy, I only used 1/2c sugar, replaced 1/4c flour with whole wheat, & replaced oil w/ applesauce. I was just short of one cup banana, so I went out on a limb & added sweet potato puree to make up the difference (had some in the freezer); gave them a buttery flavor - yum.

Greek Lentil Soup (Fakes)

This was a great recipe. I replaced one cup of water with vegetable broth and added 1/2 cup chopped, frozen spinach. I was skeptical about the vinegar, but it was surprisingly good. I'll certainly make this again.

This was really tasty. The only changes/additions I made were: using vegetable broth instead of chicken, a little cayenne & fresh chopped basil. I also simmered the soup (with lid on) for almost an hour to really meld the flavors.

I used extra firm tofu with this and it turned out pretty good. I cut the tofu into 1/4" thick slices & followed instructions except that I only baked the tofu for 30 minutes total.

Orange Raisin Muffins

This recipe is really dependent on the raisins for its sweetness. If you don't get a bite with some fruit, they are bland. To health it up a little, I replaced 1/3 of the flour with whole wheat and replaced the oil with applesauce - didn't like the flavor much, but my toddler ate them.

Cream Cheese Frosting II

This was absolutely delicious! I doubled the vanilla and added 1TBS cream. It was creamy cheesecake goodness. Spread left overs onto fresh strawberries or cinnamon/sugar graham crackers.

Caramel Popcorn Balls

These were good, but just wanted to note that I tried the suggestion of using a paper bag to coat batches of popcorn and a lot of it stuck to the bag. It was a waste of time & messier than it needed to be. I used ziplocks over my hands which made making the balls very quick & easy.
