I read so many reiews about these cakes I just had to try it. I prepared with 1 1/2 lbs. of catfish fillets and baked them in the oven 1st. Added my own special seasonings as if I were going to eat them that way. I cannot imagine boiling the fish with absolutely no seasonings-- it would have tasted bland for my taste. I used only half of a medium sized onion. I flaked most of the fish instead of mashing. I used 2 tbsp. of Hellmann's mayo which is my preference and lastly I used 1 1/2 cups of Keeblers crackers. This recipe is a keeper-- Absolutely delicious!!! The taste truly isn't that different from crab cakes.

Awesome!!! however as I always do modify ingredients in recipes. I used silver tequila, Corona lite and instead of 12oz of tequila I used 9oz and 3oz of triple sec. I also used 6oz of frozen limeade and 6oz frozen lemonade. I also used 7-up instead of water. I chilled it for hours before serving and it was the best.

Sounds good but would it be better if you used a Apple Schnapps instead of the Sour Apple Scnapps? I know of a really great one by Berentzen.

I have tried this one before, but a bartender kicked up a notch for me and I make them from time to time. 1oz Champagne, 1oz Peach Schnapps, 1oz Vodka. After shaken and poured add OJ and drizzle with Grenadine.

sounds like a Pineapple Martini minus the Tequila
