Brunch Potato Casserole
I made this casserole to use during the week for quick meals. It's very good, and quite filling! I reheat it only in portions to be eaten right away. I used about half the bacon called for and a little less cheese in the original baking. When I reheat it I sometimes add some pepper jack for a little kick. My family likes it both ways, just cheese or with the additional pepper jack.

Hearty Lima Bean Bake
I needed a healthy recipe in a hurry one night and decided to adapt this one for the ingredients I had. I used Cajun Turkey Breast-cubed, Okra instead of lima beans, Cumin instead of chili powder, and cut the Brown Sugar down to 1 teaspoon. I omitted the oregano and mustard. I served this dish over brown rice to my husband and a friend who stopped by, and everyone loved it! Reading reviews where ingredients are changed drives me nuts, but now I am grateful that this recipe had such good basic ingredients that I could make it my own! Thanks so much Cathy!
