Picante Chicken

Reviewed: Oct. 15, 2009
I have made this chicken ,without this recipe, and wanted to leave a comment. I cook mine in the oven instead of stove top. Use frozen chicken breast (in the bag), pour salsa on top, cover with foil, cook for 1 hour at 350. NEVER dry when cooked this way. If you want a little extra flavor, season with a little chili powder, cumin, and garlic before adding salsa. Not necessary but adds some great flavor. I like to slice the chicken and use for fajitas. So easy. For an Italian version use pasta sauce to cook chicken and serve over noodles. Definitely a great way to cook a great meal especially when you're short on time.

Fast Chicken Soup Base

This a great soup. Really love the flavor and the fact that the ingredient list is not overwhelming. Next time I will probably roast my own chicken (usually the store bought rotisserie chickens have some unwanted ingredients such as MSG or Gluten).

Cider Vinegar Chicken

Reviewed: Apr. 19, 2009
I tried this last night and decided it was not a stand alone recipe. I was going to serve the breasts with a couple of side veggies, but it was not good enough to eat like this. Instead I used the chicken for fajitas and it was really good. The chicken was so very tender and tasted great. I will use this recipe for anything that calls for cooked chicken...I bet it will be perfect for chicken salad!!

Gobble Up Granola Snacks

Reviewed: Apr. 5, 2009
Very good. I've been searching for a homemade granola bar recipe and this one is very tasty. I really like that I don't have to bake this one. I used honey in place of the corn syrup, added just a bit of cinnamon and coconut, left out the raisins and used a small amount of craisins...delish!! Also only had creamy organic peanut butter and it works just fine. I couldn't wait for it to cool to taste it so both my husband and I took a bite. He loved it too. I think this will be a keeper.

Strawberry Oatmeal Breakfast Smoothie

This is so easy when you don't want to cook breakfast or serve a regular cold cereal. You can make this in a variety of ways. I love to put half an avocado, banana, and maybe some honey if the banana isn't ripe enough. Never add sugar. You can add ground flax seed to this as well. My kids love it as a snack too.

Easy Granola Bars

Reviewed: Feb. 25, 2009
I'm going to have to experiment with this recipe to get it to come out just right, but the taste is so yummy I have to give it a 5 stars. I only had old fashioned oats and I'm sure using the instant will be much better at holding the bars together. Will use parchment paper and a smaller pan next time. These are just too thin for me. Look forward to all the possibilities with this recipe.

A Very Popular BBQ Sauce

Reviewed: Jan. 7, 2009
This is the first BBQ sauce I have ever made and it's fabulous. Needed something quick and easy to go with my slow cooked chicken and this compliments it beautifully. Tastes so much better than store bought that I will use this from now on when I need a simple sauce. Can't wait to try this as a marinade in the slow cooker. Thanks for posting.

Italian Amaretto Margaritas

Reviewed: Nov. 18, 2008
Whew Lawdy!! This is wonderful. Had this at Olive Garden last night and couldn't wait to find a recipe that is a close match. This is it. It is a bit more on the lime flavor than OGarden but it's close enough that I'll not need to order this again at the restaurant. My husband and I are both thrilled with this recipe. Can't wait to make this for my family next week during Thanksgiving eve appetizer dinner.

Chicken Enchiladas II

DOUBLE THE SAUCE!! So glad I read the reviews to double the sauce. I added a can of Rotel to the sauce. Seasoned chicken with garlic powder, cumin, sea salt, and black pepper before cooking in skillet. Used the large tortillas. Husband and I both loved this recipe. Our little girls were not so fond of it. I'll still make this for our family regularly and if we're having casual company.

I needed some help with with supper tonight and was glad I found this recipe. Doubled the beef and browned with garlic, used 2cups water, 2 beef bouillon cubes, few baby portabellas and canned mushrooms, frozen peas and corn. This can be altered in so many ways!! Tastes great!!

I've made these a little differently before, but I love the paprika and oregano in this recipe. Added some cheddar and parmesan cheese at the end and mixed in. Will be a regular addition to my meals.

Wonderful!! Left out the jalapeno peppers, canned tomatoes and dressing. Added lots of fresh cilantro and juice from two limes and two fresh tomatoes. Can't wait for my family to try tonight. So yummy with fresh chips... Use corn tortillas, quarter them, and fry in oil.
