Key Lime Pie VII

Reviewed: Nov. 17, 2009
Holy smokes! this was the easiest thing ever. I don't really used condensed milk much, so I was skeptical when you only bake it for 10 minutes and others claimed it set up. Well it did! So stinkin' easy. Ok, maybe not the squeezing lime part, those little buggers are difficult, kept slipping out of my fingers and knocking me in the face. Like others said, 2 cans milk, 20ish limes. Perfect. Guests loved it!

Good cookies, but a bit more work than most cookies. I added a bit of sour cream to the chocolate part so they'd stay soft.

Cheesy Potato and Corn Chowder

Reviewed: Sep. 1, 2009
I don't add the celery or the chiles (not a fan)but I do add sliced ham or chopped bacon. I don't use the Mexican style cheese, just regular Velveeta. Excellent! I think I end up putting in more potatoes, but I then add a bit more broth. This is a regular at our house in the cold months.

Tuna Noodle Casserole from Scratch

Blech! We didn't like this. It was incredibly flavorless. I added a few extra herbs and such cuz I felt like what was called for wouldn't be enough. I didn't like the topping. My husband and I each had one helping, then that was it. I didn't save any of it (I eat leftovers for lunch every day).

Creme Brulee French Toast

Reviewed: Sep. 1, 2009
Excellent...though I didn't remove the crust (I like the crust) and see why you may want to: so the egg/milk mixture can seep in. If you don't remove the crust then you'll probably want to try 'basting' the bread every couple hrs or so with the mixture so it gets good and soaked. Oh and I didn't use the liqueur, I didn't have any, just used a bit more vanilla. Tasty!

We've had this a couple times and we really like it. I like to top it with chopped tomato. I think I end up using more pesto than called for.

They were alright. The crust turned out kind of crumbly. I used blueberries (all I had) and thought it was tasty that way. Good, but not fantastic.

Chicken Noodle Casserole

Reviewed: Sep. 1, 2009
This one's a keeper for us.Although I made a few changes, partly by accident. I used "Country Pasta homemade style egg noodles" and just eyeballed it. Then I forgot to add the broth before adding the milk/sauce so I added about 1/2 a can and let that simmer with the milk/sauce and chicken and veggies. I didn't use any oil to cook the chicken cause I like the caramelizing flavor when the chicken crisps on the pan. And I don't think I used as much cheese as called for, we're not major cheese fans. Also, I think the addition of peas would be really tasty as someone mentioned.

Pumpkin Cream Pie

Tasty! I used 1 1/2 c milk, because of other reviewers saying it was runny. I also used one pkg french vanilla pudding and one pkg cheesecake pudding. Mmmmm. I think with less milk it helped. Mine wasn't runny or soupy.

Sugar Coated Pecans

Reviewed: Nov. 19, 2008
A big hit! Very addictive. I took the advice of one reviewer and put the sugar and cinnamon in with the egg white. They turned out fantastic, BUT I don't think I'll do it that way again. Mostly because they didn't look super tasty. I think they might look better doing it the way the original instructions say. And clean up might be easier too. But super tasty regardless.

Portuguese Custard Tarts - Pasteis de Nata

Reviewed: Oct. 21, 2008
Big hit with our guests. One was from Argentina and when he tasted these he said it brought back fond memories. Said his mom used to make them a lot. He asked for the recipe. They were easy and certainly tasty. The only thing I would recommend would be to maybe add something fruity, like a fruit sauce or something. Or even a chocolate sauce, or something to that effect. I think that would liven them up a lot. Give them another flavor dimension.

Easter Breakfast Casserole

Reviewed: Oct. 5, 2008
We liked this. I baked my hash browns first for a while to brown up a little, as others recommend. I forgot to add the bacon until it was done cooking. So I hurried and cooked it, chopped it up, then sprinkled it on the top. Would've been better mixed it though. Oops. Oh, and we aren't cheese lovers, so I didn't add as much cheese as called for. Tasty!

Spaghetti Pie III

Reviewed: Oct. 5, 2008
A far more tasty way to eat spaghetti. I really like this recipe. I did half the noodles, as others recommend. I haven't used green onions, but mostly because I don't buy them very often. I did toss the noodles with parm cheese. And I like it better with mozzerella cheese on top, rather than cheddar. Tasty and makes great leftovers.

Autumn Cheesecake

Reviewed: Oct. 5, 2008
This was a good cheesecake, but I didn't think it was anything spectacular. I did modify it a bit. I don't have a springform pan, only a glass pie dish, so instead of doubling the cream cheese mixture, like others recommend, i just halved the apple part. But I think I would've actually liked more apples on it. I also nuked them in the micro for a couple minutes and drained the juice. I added the crumble topping, as well which I liked. I baked with a water bath, as recommended and let sit in oven for a while after it was done baking. When it was done and had chilled for a while, i served it with some butterscotch topping (thought I had caramel, but didn't) and that was good. I don't know that I'm crazy about this recipe, but it is good.

Oatmeal Apple Muffins

Reviewed: Oct. 5, 2008
I just made these and thought they were good. I was hesitant to make them because of some of the reviews said they were dense. I went ahead and made them and I'm not disappointed. I made only 2 changes. I shredded the apple and baked at 375. I didn't add quite as much cinnamon because they are for my toddler and didn't want them too "spicey". But I didn't think they were dense. Oh, and I chopped my cranberries so that my little one couldn't pick them out and didn't add the full amount. She liked them and I liked them. Simple, nothing fancy, but tasty.

Caramel Apple Jam

Reviewed: Sep. 28, 2008
5 star definitely! with one modification, chopping the apples small, really small. Like everyone mentions, it doesn't really taste like caramel, but it does have the caramel color. A few things to consider: My sister-in-law made some soon after I did and all she had was dark brown sugar (I used light brown) and I think it looks better with the light brown sugar, though they both tasted excellent. And also, when it says to bring the water and apples to a boil, it doesn't really boil, per se, because it's not like you've got a soupy/watery texture yet, so more just wait to hear air bubbles rise to the surface (little air noises -poof-). If you make this you might know what I mean. I only added 1/2 c water, like the recipe states and so you aren't going to get a "boil". Anyways, and yes, once you add the sugars, it gets very liquidy, then it will boil. Oh, and sooo incredibly tasty on fresh baked cinnamon raisin bread. Almost makes me want to carve a pumpkin or rake leaves or something. Very "fall" tasting.

Michelle's Peanut Butter Marbled Brownies

Reviewed: May 28, 2008
I liked this recipe, except I think I mixed it too much or something because my brownies turned out kind of cakey, not so fudgey. I didn't add the choc chips because I don't like that texture when you bite into one, just not my cup of tea. But because I didn't add the chips, I think it didn't turn out as chocolatey. So I'll be adding more cocoa next time I make these, to slightly over-power the peanut buttery taste.

Oh, these are so good. I love how they are fat and soft. They aren't too sweet, yet they are still "sugar" cookies that you can frost. Love 'em!
