Easy Chicken Enchiladas
Tried this recipe tonight for my family of 5. It was EXCELLENT! My husband is a very picky eater, and he absolutely loved it. It took about 10 minutes to prepare (I had some shredded chicken on hand), and was a wonderful two dish meal. One pan to combine filling, and the 9x12 to bake it in. I realized at the last minute I didn't have any pinto beans, so I left them out, and it was still spectacular. Very filling, great tasting, and super easy to clean up. We will be making this a regular menu item at my house!
