Thank you for this wonderful, easy recipe. I used red potatoes, came out great. I wasn't sure how to cut the potatoes, I think best would be thin slices, like you'd use for scalloped.

Wow, yes olive oil makes it spectacular! Also, the sardines I had on hand were packed in hot sauce, not oil...added a nice kick to this.

Tofu Parmigiana

This was just plain wonderful, soooo yummy! I rarely experiement but I just had to try other variations of this, I added sliced mushrooms over the top layer of tomato sauce and then covered with cheese before baking. Superb, thanks Jill!

This was so good! My husband loves salmon and we're always looking for new recipes for it, this was a big hit. I used plain old Lay's classic potato chips, yum.

Thai-Style Chicken Wings

This was fantastic. The only things I changed were to use a milder pepper in place of the jalapeno since I can't eat "very spicy" food. I also had to bake the chicken more like an hour and a half to get the level of crispy I wanted. I added the sauce the last 15 min. of baking to make the sauce really stick. Yum.
