About this Cook
I am recently engaged. I think he enjoyes my cooking. No food poisoning yet! I moved to florida for my job and I really enjoy cooking.
My favorite things to cook
Anything easy. I love semi homemade recipes and I love adding a little additional ingredient to make something my own. I love cooking mexican food, and I must say, I make a good enchilada.
My cooking triumphs
Anything that I have not burned.
My cooking tragedies
I haven't caught my entire house on fire yet, just some parts of the kitchen. (kidding)

Baby Back Ribs
I would give this 5 stars because it is so easy, but I think it needs a little more flavor than just the BBQ sauce. My fiance and I each made a rack (we had a rib cookoff) and baked them according to the instructions on this recipe. His turned out with a way better flavor because in addition to the BBQ sauce he did a dry rub. That is the way I will make them in the future, but the oven method is perfect for getting the ribs moist. Just do a flash grill on the sides for a glaze and chow down!

Blueberry Pie
This was the first blueberry pie I've ever made. I made it for my fiance's grandfather as it is his favorite. I personally did not get to try it because it was all gone before I could get to it. Grandpa was mad because he only got one piece! I'll take that as a good sign. :-)

Best Spanish Rice
This is a GREAT base for spanish rice. I love the idea of cooking it in chicken broth! However I do make a few changes. I use enchilada sauce instead of salsa-just about 1/2 of a small can. ( I usually make this with my enchiladas so I have it on hand) I also add cumin which is ESSENTIAL and green chiles. I also add a little cayenne, but that is just my preference!
