Vietnamese Tofu Salad

This is a great recipe. I used extra firm tofu and felt it held up well. I pressed it before cooking to eliminate the extra water. The salad went together quickly, the most time consuming part is getting the tofu ready. The taste is great - fresh, spicy, and sweet. I did add the peanuts last so that they would retain some crunch. Thanks!!

Brown Sugar Smokies

These were okay. I made on a broiler pan on wooden skewers with about 5 smokies a piece. To get the bacon anywhere near crispy, these have to be turned. I cooked them for about 30 minutes, turned them and broiled on low for about 15 minutes. I was trying to get the bacon done. Bottom line - they had a decent taste but no real bacon flavor and the bacon was not really crispy in the usual sense. They were easy to put together - I'm taking a star off for flavor and one off for the extremely extended cooking time.

Mini Ham And Cheese Rolls

I grew up with my Mom making this recipe and it is a great recipe for a quick dinner. We melt the butter, mustard, and poppy seeds and spread on the inside of the bun. We use cheddar cheese, but choose something to your taste. Wrap in foil and bake in the oven. Easily freezable and make a quick meal at a later date.

Zesty French Dressing

Buttermilk Pound Cake II

I made the recipe as directed except used almond extract in place of the lemon and I added a bit of lemon juice as well. The cake cooked for the entire 90 minutes, I was scared it would fall so I barely opened the over the whole time. I had a very hard time getting the cake out of my bundt pan even though I had buttered it well. At first I thought the cake was overdone, it was a little bit darker than I expected. It ended up tasting great, a little crispy on the outside and perfect in the middle. I made a glaze of lemon juice, cream, and powdered sugar but it really didn't need anything. The only thing I may try next time is cutting back the cooking time 10-15 minutes. Thanks!

Mouth-Watering Stuffed Mushrooms

My son helped me make these on a trial run since we will be making them for Christmas Eve. We used both baby bella and regular mushrooms. One addition was some panko breadcrumbs to thicken up the filling. We also dipped the mushrooms in melted real butter before filling and baking which enhanced the flavor (we made some of each to test). They cooked for almost exactly 20 minutes and were perfect. Fried Rice Restaurant Style

I made this with cold rice sauteed in a mix of olive and sesame oil that was made earlier in the day and used a cup of cooked chicken, frozen peas, water chesnuts, and corn. At first my rice was really hard and clumped together and I was expecting the worst. As it heated up and I added about 1 TBS oyster sauce and a couple TBS soy, it seemed to come together and look the way it should. Served with a salad it made a great, inexpensive meal. My son who was complaining and didn't want to eat it, had his portion finished fast and ended up loving it. Had plenty left for the next days lunch. Editing to add: I made this recipe again with freshly cooked rice and it wasn't as good as when the rice had been in the fridge for a day.

Bow Ties with Sausage, Tomatoes and Cream

We really enjoyed this recipe. I used 2 cups half and half, added a few sliced mushrooms, and added about 1/2 cup of shredded parmesan. I used diced tomatoes but chopped them up before using so they weren't so chunky. Also, I did drain the grease after coooking the sausages. Otherwise, I followed the recipe exactly. Next time, I may try using 1/4 of the italian sausage and using some shrimp instead. The only criticism that I have is that there was too much sausage so I will cut down on it next time. Even so - excellent recipe and a change from the usual red sauce.

Holiday Chicken Salad

I really enjoyed this chicken salad recipe. I used Craisins and then used toasted walnuts instead of the pecans. Also, I left out the green pepper. Otherwise kept the recipe as written. Delicious and a nice change of pace from my usual chicken salad recipe.

Honey Mustard Dressing II

I made this sauce to try to duplicate the chicken sandwich from Chili's or Outback...with chicken, swiss cheese, bacon, and honey mustard dressing. It was excellent..we doubled the recipe so we would have leftover for dipping.

Grilled Cheese Sandwich

Grilled cheese is the best! I make grilled cheese on french bread - the presliced kind that is sliced about 1/4" and use the wrapped kraft slices. Good with or without tomato soup, but if you have the soup try the Progresso Tomato Basil (smooth) and add a bunch of milk to it to cream it up..great with grilled cheese. Good luck!

Blooming Onion and Dipping Sauce

This sauce made an excellent dipping sauce for my onion rings. I made the recipe as stated but cut the horseradish by 1/2..this was perfect for us and kept it from being overpowered by the horseradish.

Old Fashioned Onion Rings

These onion rings turned out perfect. I used many of the tips that I found in these reviews. I used a gallon ziploc to shake the onion slices with the flour mixture. Next, I set wire racks over newspaper to put the rings after coating with the batter. I used a covered pan for the breadcrumbs and shook the batter coated rings in there before laying them out on a piece of newspaper. The fastest part was the actual frying - quick and easy in an electric skillet. Served with the Blooming Onion Sauce from this site, there are a couple..we used the recipe that has mayonnaise as a base, but cut down on the horseradish by 1/2. Perfect companion to these excellent onion rings. Enjoy! Edit - I made these again and they are still delicious. However, I got a new electric skillet and it didn't seem to get as hot as my old one so the onion rings took longer to cook. Next time I will do them on the stove. These are really excellent onion rings!

Grilled Salmon I

Great marinade. I've made it twice. The first time I used the recipe as shown. Second time I added some Wasabi powder and crushed red pepper to add a little punch. Used the leftover sauce as a dipping sauce. It is a little sweet, but a very tasty sauce. I cook salmon on the George grill which is excellent, and serve with zuchini and squash that I also have cooked on the George. It is easy and delicious!

Barbie's Tuna Salad

This was an excellent recipe. My changes were - mayo to our taste, no dill, and a little onion powder instead of the flakes. I used solid white tuna and added a little dill relish instead of the sweet. We made tuna melts, on broiled garlic french bread, with a slice of baby swiss. The whole family loved it.
