Spring Lime Tea Cookies
I wasn't very impressed with these. I gave some to several friends, and none of them called me to rave how delicious they were (like they usually do when I give them homemade yummies). They were ok, but not special in any way. I won't make them again.

Key Lime Pie VII
I didn't have key limes, so used limes from the tree in the yard- it only took 3 limes to get enough juice! I used the "whipped cream" recipe from this site as well as the "graham cracker crust 1" recipe. The whipped cream was unnecessary- I actually scraped it off. And I wouldn't use the cinnamon in the crust next time when paired with this pie. I also want to try with key limes, because my limes were super sweet, and it would be nice to have a bit more tang with this pie. Still, I was amazed at how easy this was to make. Everyone raved about this pie ("scrumptious!", "heavenly", "soooooooooo delicious!" were some of the comments). This would be great to whip up for potlucks- it looks pretty, tastes yummy, and is easy to make. Thanks! PS: The pie seems to improve a fair bit after being refrigerated overnight.

Graham Cracker Crust I
I used cinnamon Honey Made graham crackers and then didn't add extra cinnamon. I also added about 2 extra tablespoons of butter, because it just seemed like it was too crumbly beforehand. I didn't have a 9 in pie pan, so used a 9 inch round cake pan- which worked fine. My Honey Made graham crackers came in three packets, and it took 1 1/2 packets to make the required amount of crumbs. A previous reviewer said it took just one pack, so my packs must be smaller. Next time I will try less butter and will use plain graham crackers. It was good, but was really sweet and rich. A great, easy, basic recipe though. No need for ready made crusts!
