French Toast Casserole

Reviewed: Nov. 8, 2009
I thought this was very good. I used leftover apple bread that I had made earlier and cubed it as the recipe instructs. I doubled the recipe and baked in a 9X13 pan and used the required amount of milk and eggs. It took a full 60 minutes to bake the custard and I did have to cover with foil about the last 20 minutes. I think this is a great basic recipe that you can easily alter to fit your family's needs and using what you have on hand. I came out as good as something I might expect to find at a bed and breakfast.

Chocolate Sheet Cake III

Reviewed: Oct. 16, 2009
This is a very good, easy recipe. May I strongly recommend that you use butter and not margarine. Also, for the frosting, you don't need to measure the 3/4 cup of sweetened condensed milk. Just go ahead and use the rest of the can. I'd like to try it again without the cinnamon.

Brooke's Best Bombshell Brownies

This is a delicious recipe. I baked in a glass pan for 30 minutes, but think I will shorten the baking time just a bit and take out of the oven while still gooey. Even so, they are delicious.

Taco Seasoning I

Reviewed: Oct. 12, 2009
I added this to 8 oz. of tomato sauce and used as a substitute for taco sauce. Have you looked at the ingredients in packaged taco seasoning? Almost every brand has msg in it. Not for my family. This recipe is an awesome substitute.

Burrito Pie

This will be a new family favorite. I did make a few changes to suit our family tastes. I omitted the olives and green chiles. Instead of a jar of taco sauce I used 8 oz. of tomato sauce and the taco seasoning found here on allrecipes. I used a 15 oz. can of diced tomatoes and 1 can of refried black beans. I layered as described adding additional shredded cheese. I also simmered the meat mixture for about 45 minutes allowing it to naturally reduce. This is easy to alter to meet your family's preferences and what you have on hand. I

I follow makeiteasy4me's advice and these always come out perfectly. I use a sheet of waxed paper to push the mixture down in the 9X13 pan.

Betsy's Poppy Seed Chicken

This is a favorite in our family. I have made it numerous times, always with superb results. The crunchy poppy seeds and the cracker topping make this a real winner. So easy and so good!

Chocolate Chip Cheese Ball

This is just delicious. I omitted the pecans and rolled the cheese ball in mini chocolate chips and toffee bits. I made it the night before and refrigerated it until serving time.

Kentucky Butter Cake

Reviewed: Sep. 26, 2009
What a delicious cake. It is a very light, tender cake with a rich buttery flavor. I ended up having to make two of these because the first one fell apart. I used a "rose" shaped bundt pan, and I think it was just too tender for that type of pan. When I baked it in a traditional bundt pan, it came out perfectly. I think I might try to double the glaze next time.

Beet Bundt Cake

Reviewed: Sep. 26, 2009
After reading all the reviews, I was a little nervous about detecting the beet flavor, so I added chocolate chips, 1 tablespoon of cocoa, and topped the cake with the chocolate bundt cake icing found here at allrecipes. I served it to my guests at my daughter's baby shower and mentioned that there was a "secret" ingredient. No one could guess what it was. At the end of the shower, I told them it was beets and no one could believe it. The cake was almost totally gone at the end. This is a great recipe and I will definitely use it again.

Cocktail Meatballs I

Reviewed: Sep. 26, 2009
These were a huge hit at my daughter's baby shower. The only change I made was to bake the meatballs instead of frying them. I used 90% ground beef and baked on foil lined cookie sheets. There was almost no grease. I also used Panko bread crumbs. They are far superior to traditional bread crumbs. The meatballs themselves were incredible. This will be my new meatball recipe.

Now I'm not really a chili fan, but I love this chili. I don't even like beans, but I do in this chili. Wonderful combination of flavors. We just topped with the shredded cheese.

Slow Cooker Cranberry Roast

Reviewed: Sep. 13, 2009
Delicious and my new favorite roast. I followed the directions, but substituted onion powder and organic beef soup base for the french onion soup mix to avoid the chemicals. It was a big hit. I recommend sticking with the chuck roast as I think it has more flavor.

Super-Delicious Zuppa Toscana

Reviewed: Sep. 13, 2009
Oh my goodness. This recipe is amazing and so much like that famous restaurant's soup. I did adjust a few things for my family's tastes. I omitted the red pepper flakes. I used Italian sausages instead of bulk sausages -- love the pieces instead of crumbles. Also, using kale instead of spinach is a MUST. Kale just makes this soup, IMHO.

Shrimp Fettucine Alfredo

I served this for my daughter's birthday dinner, and everyone loved it. Some said it was the best Fettucine Alfredo they'd ever had. I used chicken instead of shrimp and used real cream instead of half and half. Great recipe.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Aug. 21, 2009
I have made this recipe twice with great success. I read the reviews and so was forewarned to be cautious and leave plenty of time for cooking -- it took mine almost an extra hour. I doubled the recipe and baked the potatoes in a 9x13 inch pan for 45 minutes covered with foil. I removed the foil and baked another 30 minutes and then tested the potatoes. They needed another 30 minutes baked covered with foil. I finished by removing the foil, covering with Parmesan and baking a final 20 minutes. They were awesome. The cheese on the edge of the pan was crispy and delicious. All but one spoonful was eaten and guests raved. This will be a staple in my house.
