I really started cooking about 3 years ago when I was home alone all day while pregnant. I have recently started blogging about my home life, including cooking meals and treats for my family of nine.

Making pies for Thanksgiving would have to be my favorite tradition, next is Friday night meals for our family. They are always fun and delicious!

Southwestern Egg Rolls
I love getting southwest rolls when we eat out and these tasted even better without the deep frying. I omitted the chicken and increased the corn and spinach and black beans. Instead of jalapenos, I added a 4oz can of diced green chilies, and replaced cilantro for the regular parsley. Wrapping the tortillas neatly wasn't the easiest, but after folding and rolling, I stuffed the sides into the middle and placed in a rectangular pan to hold shape. I didn't use toothpicks or freeze, just kept in the fridge overnight. Brushed with butter just before baking in 400 degree oven for 15 minutes, turning once. Delicious!

Corn Casserole I
I did not make a casserole but instead made individual servings of this in muffin tins. I filled 18 muffin tins, after greasing them, and baked at 350 for 35 minutes. There were tasty. The first batch was a little bland for our tastes so I added 2 tbsp chopped fresh chives and 1 cup of chopped ham. It made a great breakfast.

Breakfast Loaf
This was such a wonderful breakfast! I used a sourdough bread round which perfectly complimented the cheese and ham. Instead of using the tomatoes and peppers in the loaf, I served the loaf alongside sliced tomatoes. I also added some chives to the scrambled eggs. Delicious and easy!
