Rich and Creamy Tomato Basil Soup

Very nice! Easy, vegetarian and yummy. I used a can of tomatoes (drained) to be lazy and fat free half and half. My basil was fresh from my garden so there was a lot of flavor. A dollop of sour cream and a tiny basil leaf for a garnish and it looked like an all day soup in under 45 mins!

Baked Kale Chips

Wow....I was understandably skeptical but this was a great way to cook up kale! I used parchment and sprinkled on olive oil and adobo seasoning. I didn't measure anything I just spread the kale til the pan was covered. My husband was as amazed as I was at how yummy the result was!

Cheesy Potato and Corn Chowder

Good stuff and quite simple to make. I used vegetable broth to make it vegetarian. I had all the ingredients on hand except for the gravy mix so I did a quick search online and found one. Basically it was flour and a few spices but it worked just fine. I used a mail scale to get the measurement but I'm sure that you could go with about 3-4 tablespoons and up the amount as needed to thicken. Great recipe and easy to modify to suit tastes or available ingredients!

Southern Macaroni and Cheese

Eh. Just ok. It didn't have much cheese flavor (I even used extra sharp) and was overall bland (I even used a little extra cayenne). I don't recall ever having 'southern' mac and cheese so perhaps this is representative of what that dish should taste like. But if that's the case I guess I'm not a fan of southern macaroni and cheese!

Lentil Loaf

This was OK as far as lentil loafs go but quite crumbly. I'm not sure the dry soup flavoring worked too well. I may try again with tomato soup mix instead.

Imitation Meatloaf

What a fabulous recipe!?! I served this to meat eating guests and they all liked it. I crumbled fresh white bread (the heavy Pepperidge Farms white) in place of the dry crumbs listed and it was very moist and delicious - definitely a "keeper"!!

Alaska Salmon Bake with Pecan Crunch Coating

Super easy and super yummy. You can vary the crumb topping if you don't have the exact ingredients listed on hand. I rarely eat fish and hardly ever cook it myself (always seem to mess it up when I do!) but this recipe is as easy as it is tasty!

Oven Baked Tempeh

I've made this recipe twice now and enjoyed it both times. The first time I tried it I made a LOT of substitutions but found it to be a great (and forgiving recipe). I was true to the recipe the second time with the exception of using a can of diced tomatoes rather than fresh. While I think meat eaters would enjoy this one, I don't think anyone woul be fooled into thinking there was actually chicken in the dish (then again I haven't eaten meat in over 10 years!)

Chocolate Pretzels

I wasn't able to find the round pretzels either - as I saw some other reviewers note. I used the square 'waffle' kind instead and still ended up with a tasty result. Do be sure to note the fact that the kisses keep their shape when melted so don't wait for them to 'puddle' onto the pretzel. When they are shiney take them out of the oven and press the M&M into the kiss to mold it to the pretzel. I'm sure the round pretzel would be cuter, but the chocolate adhered fine to the square pretzels and tasted just as good!

Spicy Pretzels

I didn't find these pretzels to be spicey or frankly very good at all. They were saltier but no real added flavor. Perhaps more spice powder would work but I don't think I'll be trying this one again.

Fudge Bonbons

I found this recipe sounded better than the results tasted. The 'fudge' dough tastes like the flour so it's more of a cross between fudge and brownie. I'm not sure how this could be done in 19 minutes...took me over an hour!

Enchilada Casserole

I substituted refried black beans which worked well. I didn't end up with 7 layers but still enjoyed the result. This even better reheated since the tortillas soften and the flavors blend.

Apple Dumplings I

I tried this recipe out on dinner guests and it was a big hit - I wasn't too fond of the 'douginess' but my guests like that the best! Certainly quick and easy if you like this type of desert.

This was a big disappointment. I think the cheese was the problem. Too strong and overpowered the salad. I tried it on dinner guests and I could tell they didn't like it. Won't make this one again.

Cream Cheese Penguins

I made these little fellows for a cocktail party - they brought giggles from the guests and everyone wanted the recipe. They're quite easy to make, the cream cheese will hold together any 'errors'. I used baby carrots and they worked out fine. Definitely give this fun recipe a try.
