I live with my husband and young son. I was diagnosed with Celiac Disease 2 years ago. I have been learning to cook tasty gluten free meals. I have also become a fairly good gluten free baker, making cookies, cakes, brownies, etc.

Making a gluten free black forest cake! Making beer battered onion rings (gluten free of course).

I tired to make gluten free vegan cupcakes. They were a flop, literally.

Jalapeno Chicken II
These were great! I had to wrap two slices of bacon around them to keep the pepper and cream cheese in. I thought this was really easy to make overall, will make again. My husband liked them so much he ate two!

Three Ingredient Peanut Butter Cookies
Really good- I bake them for about 10-12 minutes since I like them crunchy. Sometimes I add chocolate chips or hersheys kisses on top.

Baked Potato Skins
Time consuming, but worth the effort! Just like the ones you get at your favorite neighborhood bar.
