Banana Prune Muffins
Really like this recipe. It's not that they're not moist but they are a bit rubbery. It may be because I substituted applesauce for the oil but I've done that in many other muffin recipes without any issues. The texture doesn't bother me though and they were great! I highly recommend them!

Wiener Schnitzel
Great recipe! We used crisco vegetable oil and make sure that the veal was "swimming" in it. It seemed to work well and actually did not absorb that much of the oil! Make sure to tenderize it by pounding it to 1/4 of an inch. Not as good as the Schnitzel I had in Austria but it was close!

Ghirardelli(R) Dark Chocolate Truffles
These were a huge hit during the Christmas season! I rolled them in coconut flakes, walnuts, and candy cane bits. Everyone had their own favorite! My only note about this recipe is do NOT leave these to cool in the fridge for too long. It says a minimum of 2 hours. I thought this meant I could leave them for any amount of time after that... Apparently 8 hours is too many. The mixture was too hard to work with and I ended up having to re-melt it. Only put it in 2.5 hours the second time around and it was great!
